I'm making meatballs tonight. I usually do chopped onions, egg, breadcrumbs, parmesan, garlic, and parsley. I feel like it needs something else, what else do you put in your meatballs?

Instead of breadcrumbs, I use italian bread. I wet it, pull the crust off and use the inside of the bread.
So it's the bread, egg, parmesan cheese, garlic, salt, pepper and parsely.
Thats exactly what i do

my grandmas recipe, bread (soak it in water to make it soft, about 3 slices, then break up and smush into the meat) chopmeat, egg, grated cheese ( a ton) parsley and garlic and pepper and salt to taste

basically the same as mine. you should definitely try the milk instead of the water, its a little richer.

It's hard to say but check out the consistency of the chop meat after you start adding the bread. Use enough bread so that they roll into a ball, are semi firm and they don't break up. Hard to explain but if i use white bread which i also use it has to be older so it doesn't get gooey and chunky in the meat. For about 1 lb. of meat i would use about 4 slices (sometimes more) without the crust.

Re: what do you put in your meatballs?
I use three different types of meat to start off...beef, veal and pork chopmeat (it's called the meatloaf mix) and use an egg, fresh parsely, Italian breadcrumbs, Locatelli cheese, fresh garlic and a little bit of fresh onion. I use a little bit of crushed red pepper as well.

my mom adds pignolli (sp?) nuts also! adds a little something extra!
Ooh that sounds delicious! I'll have to try that.
Jess-I usually make them just like what you said. I actually like to make them (and meatloaf) with veal/pork/beef. You can usually find it in the supermarket. I am having meatballs for dinner tonight.

I did use the trimeat, that's the fun term I coined for the veal/pork/beef mixture. My meatballs came out soo good last night! I don't know why sometimes they're better than others

I'm stealing that term because I'm always wondering what to call it. How do you cook your meatballs? I used to saute them in a pan and then put them in the sauce. The other night I put them on a broiler pan and broiled them and they were more moist. My MIL showed me that and I've made them like that ever since.

I baked them. 350 for 15-20 minutes and then boiled them in the sauce for another 20 minutes or so. The only thing I did differently was use milk instead of water like some of the girls suggested. How long do you broil them for?
