Since your bouquet is mostly white, I dont think you will get much impact from that being in color.

And it might just be my monitor but the photos is pretty dark. Without some really nice contrasts, I dont think it will make a great B&W conversion.

Do you have any other contenders?

Your photo is beautiful!
I agree with Stef - 16x20 I would keep the color photo - the bouquet since it's mostly white won't stand out if you make it B&W with a splash of color - I say, if you want this one 16x20, keep the color and shade another photo.
