What should I make?

What should I make?

The day after thanksgiving my parents are coming to visit and DH's parents are coming over for dinner. Possibly my sister and her husband are coming over as well. Any ideas on what I should make as an entree that would be good for 6-8 people? DH's dad doesn't really like pasta, so that is out. I guess I could do a pasta and something else. Any ideas are appreciated!! Oh- btw- the fewer ingrediants, and the easier, the better! LOL!!!

Thanks!!!!

yum that sounds good!! Do you have a recipe? I dunno if they will eat the sundried tomatos, but they could probably pick them out. I love them!!

If you have any leftover turkey, my MIL usually makes a turkey casserole which is very easy - veggies, turkey, egg noodles and some canned soup and its very tasty!

Gina, i found the recipe, i remembered i posted it on here b4, also because i use the pesto, i use a little more then 1/4 cup

chicken breast stuffed with sun dried tomatoes and basil

1/4 cup of oil packed sun dried tomatoes with

1tablespoon oil from the tomatoes

1/4 cup chopped fresh basil leaves

2 tablespoons grated parmesan cheese

4 med chicken breast halves

1/2 teaspoon salt

1 teaspoon coarsely ground black pepper

Preheat oven at 425,

coarsley chop sun dried tomaotes ( i used the pesto so i didnt have to do this)

in small bowl mix basil, tomatoes, parmean and 1/2 tsp pepper

make pocket in meat, stuff equally amounts of the mixture to each chicken breast. place chicken breast in a 13x9 backing dish

take the 1tbp of oil from the tomatoes and the salt and remaining pepper and mix togehter, then brush mixture over chicken breast. bake chciken basting occasionally with pan drippings, until juice runs clear or when chicken is no loner pink inside this should take about 35-40minutes

I know that you said that your DH's dad doesn't like pasta, but what about raviolis or manicotti? It's a little different than pasta (spaghetti)?

i may do something like this as one of the entrees, but he doesn't really eat any sort of pasta filled or plain as far as I know. Im sure if I made it he would just eat it, but I dont want him to just eat it to please me. LOL.

If you can find it on sale -- what about a big filet mignon that you can get at the butcher and cut it up into 8 pieces? Or a big piece of lamb or pork? A pork loin would work well too - you can marinate it and bake it and then cut it up, maybe even stuff it.

I don't remember, you're not vegetarian are you? What about a spiral ham? They come glazed and pre-sliced. We usually have one on New Year's Eve...always really good!

ETA: Oh yes, pork loin sounds good too!

Re: What should I make?

I like the pork loin idea!! I ahve made it before, so I wouldnt be like nervous about it not turing out well! I was also thinking of maybe doing fish filets cus they eat a lot of fish, but I am most comfortable with salomon and Im not sure they like salmon, and I know DH doesn't. So maybe the pork will work best!!
