Re: whatcha makin for dinner?

dh has softball tonight. And i will take the opportunity to eat something EXTREMELY healthy

when its just me, i am good at being strict and sticking to a routine but hard when im cooking heavy food for Dh and dont want to make myself a separate meal after.

but next night we are both home for dinner, which i think should be friday. I want to make keftedes, its a different version of meatballs, and i wrote the greek name for it but its also big in most eastern european countries. Its made slightly differently and shaped just a little bit different. We dont use it in pasta but as a main meat dish. It tastes so good with mashed potatoes, but want to make different type of mashed potatoes so maybe cheese mashed potatoes. OR i am dying to make patti labelle's 4 cheese macaroni and cheese. Ive heard its like the best thing, and i know she has a cook book out so i'll just look up the recipe

I made pork chops last night. DH loves the breaded pork chops but i needed to stay somewhat healthy hahaha. And his dad does it with brown sugar and a little bit of maple syrup

. I cut slits into the pork chop and stuff it with garlic, then squeeze some lemon on it and add salt and pepper. Then i cut up red onions and green peppers and cook the pork chop with the onions and pepper. I grill the pork chop though.

The food network should have a bunch of pork chop recipes

I'm jonesing for rice and beans; I'm sure I'll get them. My MIL makes AWESOME rice and beans. I'm trying to plan my menu (supposedly you eat less if you plan ahead) and I want EVERYTHING that's fried. BAD.

a recipe i got from one of the girls on liw

chicken breast wrapeed with prociutto and cheese in the crock pot

mm can you post that? That sounds yummy

sure here it is

and i got the recipe from deeluvsvinny

Chicken Cordon Bleu Rolls

6 thin sliced Chicken Breasts, pound them out to tenderized them

6 slices of Prosciutto
6 Slices of Swiss (but we use provolone cuz we like it better!)
1 small can of Mushroom Soup
1/4 cup of milk
1/4 cup of white wine

Place a slice of prosciutto and provolone on each chicken breast and roll up, secure with a toothpick. You can season each with salt & ppepper. Place in the crockpot.
In a bowl, wisk together the soup, milk and wine. Pour over the chicken. Cook on High for about 3 hours. I make it with brown rice on the side and pour some of the cooked mixture over it. Soo Yummy!

i just notebooked this, it sounds delish!!!

I just sent it to myself to print out! Thanks for sharing
I'm making tilapia, roasted green beans and Spanish rice

I made grilled pork chops last night. Here is a really easy and delicious recipe if you want to try it out!

In a bowl I wisk together olive oil (enough to coat how ever many chops you have), lemon juice (half the amount of the oil you use), salt, pepper, oregano and crushed garlic (use as many cloves as you like...we are garlic freaks and I use a half of clove of so....crushed through a garlic press). I wisk it until it's all blended. Oh, I also add a touch of red pepper (we like it spicy too). You CAN marinate this in the fridge for as long as you'd like, or throw it right on the grill like I did last night. Don't let the chops burn....the taste is just so incredible!
