1st Recipe of the week - Shells with sausage & broccoli Rabe
Ok ladies here is the 1st Recipe of the week
Shopping list:
5 cloves of garlic chopped
extra virgin Olive Oil
1 pad of butter (teaspoon)
broccoli rabe
package of shells (or favorite pasta)
can of chicken broth (low sodium)
red pepper flakes about a teaspoon
3 links of sweet sausage
3 links of hot sausage (or all sweet if you prefer or all hot up to you)
grated parmesan cheese
salt & freshly cracekd pepper
Trim the ends of the broccoli rabe (maybe an inch & clean it) bring a pot of water to a boil - when it boils add about 1/2 teaspoon salt and add the broccoli rabe - cook that about 7 minutes so its soft but not tender you still want a crunch. Place the broccoli rabe in a strainer in the sink and just leave it there. In the same pot put more water for your pasta - as the water is coming to a boil. Take a frying pan and heat with no oil for about 2 minutes over medium heat then add sausage cook the sausage total for about 12 minutes making sure to brown all sides. (Remember to check the water for the pasta - if its boiling add a teaspoon of salt and add the pasta cooking for 8 minutes to al dente (not soft) while the sausage is cooking put broccoli rabe on a cutting board and cut in in half not long ways short ways) When the sausage is down take it out and put it in a plate dont cut yet it has to rest. Reduce heat to low then add 3 tablespoons of olive oil the garlic and the red pepper flakes - dont walk away garlic burns fast mix it around frequently until it turns light brown then add the broccoli rabe, some salt & pepper and put the heat to medium and cook for 4 minutes (now slice the sausage in pieces) after the 4 minutes add 1/2 the can of chicken broth and stir - let that come to a boil for 1 minute
drain pasta if you didnt already to that and put the pasta in a pasta platter with 1 pad of butter & toss - making sure all the sausage is cooked add the sausage & broccoli rabe mixture to the pasta mix well and top with grated cheese!
