Scrapbook thing is a GREAT IDEA!
For my mom's 50th b-day, I asked everyone coming to write her a letter, about their memories of her. Then I put them all in a book with pictures. I thought it was cute, there was all different kinds of stationary and stuff that people used, and that made it so much more'authentic'.
My other suggestion is a Trip maybe? Are they able to move around well? I mean liek a small overnight trip somewhere, or a fun experience they have NEVER done like a Spa or something different. I guess that depends if they drive and stuff.
