A bunch of stupid cooking questions:

What is the difference between baking and broiling? Do you need different dishes for each one? Can they both be done inside the oven?

Do the grilling pans work for grilling on the stove top or do they still keep a ton of fat from the meat?

Re: A bunch of stupid cooking questions:

Baking is heat from the bottom, broiling is heat from the top. Broiling also tends to be a hotter temp - maybe 450º or more. Broiling is generally for steaks, meats, fish.

Can one broil in a normal gas oven or do you need special equipment?

Re: A bunch of stupid cooking questions:

There should be a broil setting on the oven. Usually it's all the way at the 'high' end of the dial. Sometimes if you have two knobs for the oven one will read Bake-Broil-Off-Clean etc. and the other dial will have the numbers for temp. Mine's electric and it goes from 150º to 500º followed by Hi-Broil.

Re: A bunch of stupid cooking questions:

A lot of stoves have a separate broiler door below the oven door. Beware- an entire London broil can cook in like 10 minutes or so in a broiler - it is HOT.

Re: A bunch of stupid cooking questions:

Some pans can not go under the broiler. Use metal pans or disposable b/c the liquids tend to dry up and is nearly impossible to clean. Broiling meat takes less time b/c it is a higher temp, so you can't broil tough cuts like brisket. (trust me, we know, so does the local pizza place)
