All you cooks out there...

Original post by kelly4

I need a good suggestion for making appetizers! I am going to my parents house on Sunday for an early St. Patty's day dinner with my inlaws and cousins. My DH (the cook in our house) will be away for the weekend at a conference, so I'm all alone in this. I want something different, not the usual pigs in the blanket, potato puffs, etc. My inlaws are mederterranian and don't eat the same american food we do. Does anyone have any suggestions? I had asked my DH for some, but all he said is that I should use my imagination and just experinment! That's because that's what he does, and things always taste great! I'm not much like that and want to stand on my own (well with a little bit of help from LIW!)

Thanks for any leads!

Two of my favorite Mediterranean appetizers are hummus and baba ganoush served with pita bread. I never even heard of that stuff when I lived in NY but got introduced to it in DC and have been hooked ever since! The hummus is made from chick peas and the baba ganoush is made from eggplant. You could find it already prepared in the store or even make it yourself.

Irish Tracy, I would LOVE your Irish Soda Bread recipe!!!

This is a good one:

Hot Crab Dip

8 oz. cream cheese
1 can (6 1/2 oz.) crab meat
2 T. chopped onion
1 T. milk
1/2 tsp. horseradish
1/4 tsp. each salt and pepper

Pick through crab making sure to remove any cartilage or shell. Blend all ingredients, spread in bottom of glass pie plate and heat in oven 375 for 15 min. Serve with crackers.

Artichoke Dip:

Can of artichokes in water, 1 cup of mayo and 1 cup parmesan cheese, mix together sprinlkle with paprkia and bake in oven at 350 until bubblly. Serve with Wheatsworth crackers. It is delicious!!

Also 7 layer taco dip:

Beans
Sour Cream
Cheese
Lettuce
Onions
Salsa
Tomatoes

You can also add taco meat to this, but it is great without.

Another one is spread creamcheese on a platter, top with salsa, and cheddar cheese and heat till the cheese is melted. Serve with Tostitos

Re: All you cooks out there...

Hummus is really good too.

I also make brushetta which everyone loves.

Package of Tomatoes on the vine (usually 6), garlic, onions chop all up and make sure to keep adding the tomatoe juice form the cutting board and then add a little olive oil and salt. Let sit for a bit and serve at room temperature. I have made this for my family without the olive oil on several occasions and it still tastes good. Serve with the pancitteo they sell at Costco.
