Incredible This-will-become-your-favorite Veggie Pot Pie

2 frozen pie shells, or fresh dough if you have time
2-3 cups veggie broth
1-2 potatoes
3 medium carrots
a variety of veggies such as green beans, zucchini, mushrooms, or just about anything.
1 package frozen spinach
grated or sliced cheddar to cover pan in two layers
lots of good spices: garlic, cumin, tarragon makes it savory, whatever you like.

Directions:

Thaw pie shells and try real hard to take one out of the tin w/o it breaking into a million pieces. If you manage, you are a god(dess). Meanwhile, cook chopped veggies (NOT spinach, just keep it till later). Cook in microwave or oven till about 3/4 cooked. To make sauce, heat broth in large saucepan, add spices, and lower heat. Add slowly either cornstarch or flour (I use flour), till slightly thickened. You can add milk and use veggie buillon cubes if you wish, for a thicker consistency/more flavor. Add the cooked veggies to the mixture and coat them with sauce.

Meanwhile, layer half of the cheese on the bottom of lower crust. Spoon in veggies and sauce, then add spinach on top. Add rest of cheese on top of that, and close it up as best as you can with the other shell. Bake at 400 for about 45 minutes, (until crust is brown).

Makes: 3-4 servings for hungry adults, Preparation time: 15 minutes, Cooking time: 45 minutes

Ricotta Cheese Cookies I LOVE these!

INGREDIENTS
2 cups white sugar
1 cup butter, softened
15 ounces ricotta cheese
2 teaspoons vanilla extract
2 eggs
4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt

ICING INGREDIENTS
1 1/2 cups confectioners' sugar
3 tablespoons milk

DIRECTIONS
Preheat oven to 350 degrees.

In a medium bowl combine flour, baking powder and salt.

In a large bow, with the mixer a low speed, beat the sugar and butter until combined. Increase speed to high and beat until light and fluffy (about 5 minutes). Reduce speed to medium and beat in the ricotta, vanilla and eggs (one at a time).

Reduce speed to low. Add flour mixture; beat until dough forms.

Drop dough by level tablespoons, about 2 inches apart; onto the baking sheets. Bake at 350 degrees for about 15 minutes or until cookies are very lightly golden (cookies will be soft).

When cookies are cool, prepare icing. In small bowl, stir confectioners' sugar and milk until smooth. With small spreader, spread icing on cookies; I sprinkle with colored sugar sprinkles when the icing is still wet.

I don't even remember you asking for recipies... Sometimes I wonder what board I'm posting on, since this is all news to me.

Can I bring it tomorrow? I'm lazy. I have a pile on my dresser that is 'Sh!t for Alyssa' might as well add to the pile!

If this is way confusing don't mind it!! Its hard to write out the recipe for something you can make so mindlessly!!

Super Easy 'Italian' Rice and Beans
(serves 4...or 2 really hungry people!! Adjust quantities of ingredients however you would like!!)

Extra Virgin Olive Oil (No exact amount, just use your judgement)
Fresh Garlic (4+ cloves, adjust based on your likes)
Fresh Onion (about half an onion, adjust based on likes)
Fresh Basil (if possible, but ok to omit this)
2 cans of Red Kidney beans, drained (1 can of beans would work also, adjust amount based on your likes)
2 Cans of Diced Tomatoes (garlic and oil kind if possible, or any kind would work)
2 bags of Microwaveable Brown Rice
Salt and Pepper to taste (try to limit the amount of salt used, you dont really need alot of it)
Italian Seasoning to taste

Chop onions and crush garlic. In a sauce pan heat up olive oil on Medium/Low heat, add onions and cook until translucent. Add garlic into pan and cook until garlic is getting very slightly browned. Add in diced tomatoes (liquid included) and bring to simmer. Season with italian seasoning and salt and pepper to taste. Simmer for about 15 minutes. After 15 minutes, add drained kidney beans into saucepan. Continue to simmer on low for another 5-10 minutes until beans are heated through (keep an eye on the beans, if they start to get too mushy take the saucepan off of the stove). Season again if needed.
While tomatoes are coming to a simmer on the stove, cook brown rice according to package directions in a large bowl/corningware (rice should be done around the same time the sauce is coming off of the stove). Drain water from rice, and empty rice packets into the same bowl/corningware used to cook in. If rice is done before sauce, keep covered.
When sauce is finished simmering, remove from stove and add to the brown rice. Combine sauce and rice. Serve.
Serving recommendation: Sprinkle with grated cheese to taste. Also, if you are a fan of foods with a kick to them, a few dashes of hot sauce add's a whole different flavor to the dish. (Any kind of hot sauce works well, two best that I have found are the original tobasco and the green tobasco)

**This recipie can be changed in any way that you want depending on your mood. Subsitute chick pea's for the red kidney beans, increase/decrease the amount of beans or tomatoes based on your likes. Add more garlic, add more onions. Throw in other ingredients too (red peppers work well, maybe even some sun dried tomatoes). Play with it and make it your own!! It is a really simple weeknight/'dont feel like cooking tonight' recipe, so have fun with it!! It also helps that what you use to heat up the rice can also be used for serving and storage, so clean up will be a breeze (one pot to wash isn't too bad)!!

Enjoy!!

Shauna's Simple Sangria...

1 Jug (yes jug, haha) of Blush Wine.
1 Bottle of Triple Sec
1 liter bottle of Lemon-Lime Seltzer

Assorted Fruit... Apples, Oranges, Limes, Strawberries, Grapes.
* Stay away from most other berries, (i.e. Raspeberry's, blueberry's, etc they get mushy and sour!)

In a pitcher add cut up fruit until about 1/4 full, add Ice until about half full.... The pour the wine in until about 2/3's full.... add triple sec and seltzer to taste.

Its a little difficult to measure those out so don't fill to the rim. Save some room in the pitcher to you can taste it so it is made to your perfection.

Pineapple Upside Down Cake

Ingredients
Topping:*
1 cup of firmly packed dark brown sugar
1/2 cup unsalted butter
1 can (20 oz) of pineapple slices

Cake:
1 1/2 cups all purpose flour
6 Tbsp cake flour
6 Tbsp of ground almonds (from about 2 oz of whole almonds)
3/4 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups of sugar
1 cup (2 sticks) unsalted butter at room temperature
4 large eggs
3/4 teaspoon vanilla extract
3/4 cup sour cream

Method
1 Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.

2 Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.

3 Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

Makes 12 to 14 servings.

Re: alright ladies...last ditch effort for those recipes for 2010 Shower cookbook

This is a recipe I recently saw and want to make - looked soooooooooo good! its from that lady on Everyday Italian. ONly takes 20 minutes to make and serves 4.

Ingredients

1 large apple, peeled and grated (about 1 1/2 cups)
1/4 cup sugar
1 stick butter
1/4 teaspoon salt
1/2 cup water
1 cup flour
4 eggs
1 cup whipping cream
2 tablespoons confectioners' sugar, plus more for dusting
1 teaspoon cinnamon
Olive oil for frying

Directions

In a medium saucepan combine the butter, salt, sugar, and water over medium heat. Bring to a boil. Take pan off the heat and stir in the flour. Return the pan to medium heat and stir continuously until mixture forms a ball, about 3 to 5 minutes. Transfer the flour mixture to a medium bowl. Using an electric hand mixer on low speed, add eggs, one at a time, incorporating each egg completely before adding the next. Beat until smooth. Add the grated apple and stir to combine. If not frying immediately, cover with plastic wrap and reserve in the refrigerator.

Combine the whipping cream, 2 tablespoons confectioners' sugar, and cinnamon in a

medium bowl. Whip until medium soft peaks form. Transfer the whipping cream to a serving dish.

Meanwhile, pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 325 degrees F.

Using a small ice-cream scooper or 2 small spoons, carefully drop about a rounded tablespoon of the dough into the hot olive oil. Turn the zeppole once or twice, and cook until golden and puffed up, about 4 minutes. Fry the zeppole in batches so as not to overcrowd the pan. Drain on paper towels. Transfer the zeppole to a serving dish and sprinkle with powdered sugar using a small sieve. Serve with the cinnamon whipped cream alongside for dipping.
