Amazing Oatmeal-Apple Cookies

these are soooo delicious!!
Ingredients:

1 1/2 cups regular or quick-cooking (not instant) rolled oats
3/4 cup all purpose flour
1/2 cup whole wheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup plus 2 tablespoons (1 1/4) sticks salted butter or margarine, at room temp.
1 cup plus 2 tablespoons packed light brown sugar
1 large egg
1/2 cup shredded peeled apple
1 teaspoon vanilla extract

1. Adjust two racks to divide the oven into thirds. Preheat the oven to 350 degrees. Lightly grease two baking sheets

2. In a large bowl, with a wisk, combine the oats, all purpose flour, whole wheat flour, baking soda, salt, and spices until mixed

3. In a medium size bowl, with an electric mixer at medium-high speed, beat the butter and brown sugar until very creamy 2-3 min. Beat in the egg, apple, and vanilla until very well blended. Gradually add the flour mixture, beating just until blended. Drop by rounded teaspoonfuls onto the prepared baking sheets, spacing the drops about 2 inches apart. Bake until they are golden brown. Reverse the baking sheets on the racks and from front to back once during baking. With a wide turner, immediately transfer the cookies to wire racks to cool completely.
Makes about 60 cookies.

Its a spice!

Cardamom, sometimes called Grains of Paradise, is a pungent, aromatic herb first used around the eighth century, and is a native of India. It was probably imported into Europe around A.D. 1214.

Today, cardamom is cultivated in India, Nepal, Sri Lanka, Guatemala, Mexico, Thailand and Central America.

The spice known as cardamom is the fruit of several plants of the genera Elettaria belonging to the family Zingiberaceae, whose principal member is Elletaria Cardamomum. The plant it self is a perennial herb with a thick, fleshy rootstock which sends up flowering stems from 6 to 12 feet high.

Cardamom is usually purchased either in seed pods:

In its 'decorticated' form, that is, taken out of the seed pods: or, the seeds are ground into a powder. This last is the most common form in which cardamom is sold.

Cardamom is used in a variety of cuisines today, primarily in and around the Indian subcontinent and in Scandinavia. Some of my favorite recipes involving cardamom can be viewed here, as well as links to other recipes and even a variety of other information related to cardamom.
