Outing myself as a lurker. I have a great one that I can give you when I get home tonight. I'm actually trying it as mini muffins tonight for my office potluck tomorrow. Not sure how that'll turn out, but as bread, it's great. It's got chocolate chips.

I have an AWESOME recipe for banana nut bread. It is my specialty. I don't usually brag about my cooking, but this is one I can do! I found the original recipe on cooking.com and I continue to modify it a little bit to make it bettah.

Banana Nut Bread

The walnuts are toasted just enough to remove their raw edge before being added to the batter.

RECIPE INGREDIENTS

1 cup coarsely chopped walnuts (3 ounces)

1 1/4 cups unbleached all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup sugar

2 large eggs

1/2 cup canola oil

3 medium overripe bananas, mashed (1 1/4 cups)

1 teaspoon pure vanilla extract

RECIPE METHOD

Preheat the oven to 350 degrees F. Coat a 9-by-5-inch loaf pan with cooking spray. Spread the walnuts in a pie pan and toast in the oven for 5 to 8 minutes, or until fragrant; let cool.

In a medium bowl, whisk the flour with the baking soda, cinnamon and salt. In another bowl, combine the sugar, eggs and oil and beat at high speed until light-colored and creamy. Add the mashed bananas and vanilla and beat until smooth. Stir in the dry ingredients until thoroughly blended. Fold in the nuts.

Pour the batter into the prepared pan and bake in the middle of the oven for 50 to 60 minutes, or until the top is springy and a cake tester inserted in the center comes out clean. Let the loaf cool in the pan for 10 minutes before turning it out onto a rack to cool completely.

Re: anyone have a banana bread recipe???

Banana Chocolate Chimp Bread
from Sticky Fingers Bakery in DC

1/3 cup margarine
1/2 cup sugar
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 medium ripe bananas, mashed
1/2 cup soymilk
1 teaspoon vanilla
1/2 cup chocolate chips (my co-worker swears by using mini chips. I use regular ones and it's just delish)

1. Preheat oven to 350 degrees. Grease loaf pan with margarine or oil.
2. In a large bowl, cream together margarine and sugar. Mix in flour, baking powder and baking soda. Add mashed bananas, soymilk and vanilla. Mix until batter is moist and sticky. Gently fold in chocolate chips.
3. Pour batter into loaf pan and bake for 40 to 50 minutes, or until top is golden brown.
4. Yum!

I made these tonight in my new mini muffin pan. They only needed about 20 minutes in the oven. But usually I make the loaf and it's great.
