Re: Anyone have a guacamole recipe

Hey Kelly

I don't measure the ingredients but I put:

2 avocados-mashed. Make sure the avacados are soft
minced garlic- to your taste
cilantro
salt
Sometimes I add a little cumin to give it that Mexican flavor
Tomato, don't add this until the very end, they can get all mushy.

Re: Anyone have a guacamole recipe

1 ripe avocado (soft but not mushy)
Diced scallions (approximately 2-3)
Diced tomatoes (1 small to medium)
Tabasco Sauce (to taste)
Old Bay seasoning (to taste)
Onion Powder (to taste)
Salt & Pepper (to taste)

Peel the avocado and discard the pit. Mash the avocado with a fork. Add all ingredients but tomato and mix well. Add tomatos and mix lightly. The amount of each ingredient is to taste. I put about 5-6 drops of tabasco in, but if you like it spicer, then add more. Old Bay add carefully. I add a few shakes and then taste. Do less than more. Onion powder is about the same - a few shakes. You can even live without the onion powder if you have the scallions.

Re: Anyone have a guacamole recipe

I've made many...this has been my ABSOLUTE FAVORITE:
From The Barefoot Contessa Cookbook:

4 ripe Haas avocados
3 Tablespoons lemon juice
8 dashes Tabasco sauce
1/2 cup small diced red onion (1 small onion)
1 large garlic clove, minced
1 Teaspoon Kosher salt
1 Teaspoon freshly ground black pepper
1 medium tomato, seeded, and small diced

Cut the avocados in half, remove the pits, and scoop the flesh out of their shells into a large bowl.
Immediately add the lemon juice, Tabasco, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

I made this a few weeks ago, put it out for my uncle and father...I had to go outside to get my dogs...5 min. later...they ate the entire bowl!!!!

Re: Anyone have a guacamole recipe

My DH LOVES this recipe -- I just made a big batch for him this past weekend. I also don't measure -- it's all to taste. We don't like spicy guacamole so this isn't spicy.

2 ripe Haas Avocados (they should be so ripe that the pit almost pops out on it's own)
minced garlic (go easy)
finely chopped fresh white or yellow onion
chopped tomatoes (add at the very end)
a squeeze of fresh lime juice

Sometimes I add a little onion powder and garlic powder in addition to the fresh ingredients for a richer flavor.

Cover with plastic and let it sit in the fridge for a little while so all the flavors blend together.

ETA: This is an avocado lover's recipe so we don't add salt or pepper to let the true avocado flavor come through. But you can add it if you wish. Also, we like it chunky -- there's no need to puree the avocados!
