You can expect usually a 5-10% no show. I ran special events (golf tournaments, black tie dinners not weddings) for 10 years. We only had one event in all that time that was over capacity.

In Palm Springs, we had 250 people plus staff - the room held 240. We opened up the foyer with tables and prayed for no shows. Next thing we know people brought uninvited guests (ok it was Barron Hilton & Buddy Hackett - we couldn't throw them out).

We had to wait until people didn't show to figure out which staff could eat. Being second in command, I had to stand in the back and troubleshoot on an empty stomach.

In the end, it helped to have Sonny Bono (ex-Palm Springs mayor) there. No fire wardens bothered us.

Most of the No's usually come close to the RSVP date or not all at (i know its terrible). I think people feel bad saying no, meanwhile I am praying that a lot of people can't come. I sent out way too many invites.
