I'm curious too...

Someone at the Chip Shop in Brooklyn gave my friends the low down:

Chill the Twinkies overnight

Heat fryer to 375

Make batter...one cup of milk, 2 tablespoon of vinegar (he insisted!), 1 tablespoon of oil.

In a separate bowl, stir together 1 cup of flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt.

Whisk milk/vinegar/oil together with dry ingredients until mixture is smooth. Refrigerate.

Push a popsicle stick into the Twinkie lengthwise. Dust lightly with flour and then dip into the batter, covering entire cake generously. Place in fryer. They float so you'll need to hold it under with tongs or a BBQ fork (anything with a long handle).

Fry 'til brown, about 3 or 4 minutes.

Remove and drain on a paper towel. Let sit for a few minutes before serving...cream will be HOT!

Let me know if you try it! I figure if I fast for the next two weeks, I can try half of one!!
