Baking for the Holidays

Baking for the Holidays

I started my christmas cookies early and have so much more to do. I make 14 different types of cookies, freeze them and then put in holiday tins as gifts. I've only made 7 different types and so nervous I wont finish in time. Everyone always looks forward to them and I took a break from baking last year becuase of the wedding. Has anyone started their baking yet? What types of cookies are you gals making?

I also do the holiday baking.
I make my own lables.. every year I do a different label and different package.

Last year I did 8 different cookies- my favorite being the peanut butter cookie with the jelly thumbprint...

I won't be doing them this year b/c they take too much time.

This year I'm only doing 3 or 4
gingerbread men
choc. chip
and something else

it is really time consuming and now that I'm commuting to the city from the island i am way to tired to make them during the week. the peanut butter ones sound good. i figure its better than going out and buying gifts for the people at work i rather bake after you factor in the supplies its the same as buying a gift but its personalized.

Can I ask - when you freeze them what do you put them in and do they stay real fresh? How do you defrost them? I would love to start early but never did the freezing thing..was scared they would alter the taste and freshness.

Re: Baking for the Holidays

No baking for me, I just help out my stepmother who makes about 600 dozens cookies form the day after thanksgiving to Jan 1 st!

She gives them as gifts, etc. Each child, nephew, niece etc. has their own special cookie and we each get them made for us in our own huge tins.
I love this time of year!!!!!!

I put them in aluminum tins, lasagna pans i think they are called. I put wax paper and then aluminum foil on top. I've been doing this for years and they taste fresh. if you have sticky cookies you can put wax paper between each layer. Aluminum pans come in all sized and are cheap at mace's i get them for 4 for $1.00 and you can get smaller ones and stack them. I make the fudge and the icing a couple days before. the cut out ones that need decorating i do two to 3 days before and do alittle each night.

I love the butterscotch oatmeal cookies. Those are my ultimate favorites! I will have to try the freezing thing. Thanks for the tip and good luck with all your baking.

I don't truly bake too much, but I do make about 15 lbs of various chocolates from pretzels to nut cups to raspberry filling to caramels to plain old chocolate molds. I started this tradition back in High school and haven't stopped since (16 years ago) and now it is expected.

Thanks for the reminder, although I've finished my cards & some of my shopping, the chocolate had slipped my mind.

Re: Baking for the Holidays

Ok this year Im doing the same thing..I have more questions about freezing because I would like to start early too!

How long do you put them in the freezer for? Your post said something about 3 days? # days or start now and they can hold? Im wondering if say plain old chocolate chip will freeze well and for how long???

Also Im making this year..sugar cookies, Caramel crunch bars, white chocolate chip cookies, mocha raisin-nut fudgies, cream cheese bars and truffles..

Re: Baking for the Holidays

I found this about freezing cookies...maybe it will help someone..

Seven Tips For Freezing Cookies

Cool cookies before wrapping and freezing them. This prevents moisture from forming when a warm cookie is exposed to the cold air in the freezer.
Store cookies in a cold freezer, as close to 0 degrees as possible.
Wrap cookies well before freezing them. Wrap one or a pair of cookies in plastic wrap, then seal them in a plastic freezer bag, rigid plastic container or gift tin. Then label the containers with the date and contents.
Store cookies inside the freezer rather than the door shelves, which are warmer.
Leave cookies in the freezer no longer than three months.
Defrost cookies with their wrapping in place. The moisture that forms during defrosting forms on the wrapper, not the cookies.
After you bake and cool cookies, wrap them individually in plastic wrap and freeze them in gift tins. Wrapping them in plastic wrap looks attractive and keeps them fresh tasting. When it's time to distribute them, simply remove tins from the freezer as you need them.
