At our tasting, they said that our final count is due 10 days before the wedding, and after than we can't remove any guests, but we can add guests until like, 2 days before.
So here's my question - since I've heard lots of stories about people having to pay for guests that cancel in the last week or so, should I low-ball and tell them less people at the 10 day mark, and then give them the actual number 2 days before? I'm trying to think of any risks to that scenario, but can't come up with anything, as long as I give them the real # by the 2-day deadline...
Thoughts?

Personally, I wouldn't chance it.

I was all about that before the wedding... until I paid for a crapload of empty seats. Lowball the number by 5 or 10 at the most and then give the ACTUAL count 2 days before. Ours kinda went through the escort cards and the number of people at each table with us so we weren't able to lie about it if we wanted to!

I would totally lowball because they can always add at the end if needed.

Since you can only add, and not subtract, I would definitely subtract a few people, I'd go as high as 10. I think that's actually very kind of the hall, sometimes you get some last minute cancellations, so this way you won't get stuck paying for meals for people who cancel on you.

I agree. If I have the option to, I would low ball it and add on later

yes, definitely say about 5 less people (make sure any seating chart you send them is also 'missing' these people). Then 2 days before, you can re-send the seating chart with the correct numbers.

its a good bet... you just have to figure out what number your comfortable betting on... 2. 5, 7, 10...
we had to give give a count of the number of people at each table... and they set the tables accordingly... i wasnt comforatble low balling... because then i look like an a hole when someone shows up and has no where to sit

i've been told to do this. Tell them your final count is 5 or 6 lower than it actually is. Then the day before just add those extra people in. You can always add at the last minute; but you can't subtract!

Yep! We told them 10 less and had 8 cancellations---were more than happy to pay for those extra 2 people the day before wedding.

Re: Betting on guests bailing?
Hi--
We only low balled by 2 ppl..and i am having second thoughts...we should hav done a few more less but we will c....nonetheless, even if its a few less...it does not hurt...give them less..they will be more than happy to take ur money for more ppl.
The only problem or thing that made me nervous was when we gave that count we had to give table assignments..so i didnt want to low ball too much as it would mess up this ppaerwork and then the day before the wedding, i'd be scrmabling to make a more accurate seating chart. So, leaving off 10 ppl seems problematic but leaving off 4 or 5 seems smart.
