sheesh, after reading some of the threads on here about cake, im so nervous. I was planning on using Audreys and was planning to do white chiffon cake, fresh fruit filling, and fondant icing. Now after reading all the horrible things ppl say about fondant, im worried. its a simple type cake id be looking to do. pic is below, was made w/ fondant (except cake would be light blue w/ choc brown scrolls), should i see about doing it in smooth buttercream? guess wouldnt want to risk whipped cream in august. also, is there a price diff b/n these diff types??
wow a triple way tie, thats pretty cool..., love the fondant though

i know that fondant LOOKS nice, but i love the way whipped cream tastes...but not sure how it can hold up for an intricate cake

Re: Cake poll!
You should talk to your baker about alternatives to fondant for you cake if you are interested. I'm sure they'll be able to do it buttercream, but it might not look as smooth.
A cake covered in fondant, however, is more expensive than buttercream or whipped cream.

thx for info! think ill see about buttercream. I dont think this cake is so elaborate that id mind if it wasnt perfectly smooth as glass.

I love whipped cream cakes too, but it may be iffy because they add a bit more stabilizer in August which may alter the flavor a bit.
I think you could pull this cake off in buttercream too though. You can send a picture to your baker and ask them. The design is beautiful and simple, so it can more than likely be done.

My fondant tasted really good- like marshmallow. Why don't you ask to taste it?

Re: Cake poll (& other cake questions)
I dunno.... I prefer the look of fondant.... it's much more polished.
once we decided on flavors, FH and I purchased a test cake.... a 4 serving cake done with the cake, fillings, and fondant colors we selected.
We didn't find the fondant that objectionable.... Do the same yourself, and you'll know whether you like your flavor combos, and the fondant!

A cake testing is definitely recommended so that you can get a feel for how the cake will not only taste, but look. It's also a terrific way to figure out if you like the fondant/buttercream/whipped cream or not, because what you think tastes best will be a huge factor.

Re: Cake poll (& other cake questions)
oh, we tried whipped cream.... and it was YUKKY!!!!
Mind you, we LOVE home-made whipped cream, BUT.... whipped cream is rather unstable, so they add gelatin and other stabilizers to it so it can stand up to the job of being a filling or outer icing. We thought those stabilizers make it taste REALLY FAKE... a combo of waxy and coolwhip-like in taste... sort of like the cream in a hostess cupcake....
We found fondant / buttercream to be much less objectionable
that said, each bakery is different, so I recommend tasting a sample of each...

do you have family or friends whose tastebuds you trust on LI? Maybe you could treat them to a test cake, and have them report back to you?

Re: Cake poll (& other cake questions)
Okay, I'm using Audrey's for our Grooms Cake. Tom had to do Fondant on our cake and when I talked to him about my fear of the taste of fondant he said that he's do a layer of buttercream underneath the fondant to make it taste liek buttercream instead.
Why dont you ask about that?? I'm sure it'll be tasty either way

Re: Cake poll (& other cake questions)
Audrey's doesn't make whipped cream between May and September so you really don't even have that as an option. Personally I prefer fondant, but it's much more expensive so we just went with buttercream since that is already included in the price of our hall.

Re: Cake poll (& other cake questions)
All cakes covered in fondant are usually given a think layer of buttercream as a crumb coat, so you can even look at it as having the best of both worlds. If you don't like the fondant, peel it off...but it truly is a preference...
