My hostesses will pass out the program, stand by the guest book and assist my coordinator where needed at the ceremony. I have 4 of them.
They will also help at the gift table and help at the place card table at the reception. They are really going to help me out a lot to make sure the day goes smoothly.

Maybe i'm one of the few that's heard of hostesses..lol...I don't know if you're of Caribbean heritage but my family usually uses them at our weddings. I didn't have them but certainly can understand their function. I had my cousins and my friend who did DOC type functions do the things you listed...but I probably could have given them the title and the dress

I think you ABSOLUTELY can have them wear black. Trust me, people may over analyze it now but no one will think anything of it the day of. Dress them in whatever color you choose...I think black will be lovely
