Chili Recipe

Ive been looking for a great chili recipe... anyone have one?

Here is one I use - easy, quick and good. Got it from allrecipes.com

QUICK CHILI

This may not be chili the way your mom made it, or the way your city makes it??people are oddly possessive about chili, tending to insist that it should be made their way or 'it isn't chili.' But what if you just want a big bowl of chili, maybe to go alongside some juicy sausages you've decided to grill, without a lot of preparation time and fuss? Then this chili is for you: quick, a little spicy (add chili powder if you want more heat), and flavorful. Serves 4. Per serving: 505 cal, 31 g fat, 85 mg cholesterol, 29.1 g carbohydrates, 9.9 g fiber, 28.1 g protein, 1165 mg sodium.

2 tbsp vegetable or olive oil
1 clove garlic, minced
1 lb ground beef
1 can red or black beans, undrained
1/2 c chopped onion
1/2 green pepper, chopped
2 8?oz cans tomato sauce
1 to 2 tsp chili powder

Cook garlic and beef in hot oil until meat loses its red color. Add beans and their liquid, onion, and green pepper. Pour in tomato sauce. Add chili powder (and salt to taste, if desired). Simmer over low heat, stirring occasionally, until desired thickness (about 45 minutes).

Here's another I have in my collection - haven't made this one yet!

BLACK BEAN CHILI

This thick chili is a delicious, substantial meal for family and friends. There are lots of ingredients, but preparation is really simple??just do a little chopping and you're ready to mix and cook. As long as you're making chili, you may want to double the recipe and
freeze some for later. Serves 4. Per serving: 360 cal, 5.3 g fat, 0 mg cholesterol, 60.6 g carbohydrates, 11.3 g fiber, 18.6 g protein, 117 mg sodium.

2 tbsp sherry
2 tbsp red wine
1 tbsp olive oil
2 cups chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1 small jar pimientos
4 cups cooked black beans (canned are fine)
2 cups water or chicken broth
2 tbsp minced garlic
1 cup chopped tomatoes
2 tsp cumin
1 to 2 tsp chili powder
1/2 tsp oregano
1 tbsp cilantro
2 tbsp tomato paste
4?oz can chopped green chilies

In large pot, heat sherry, wine, and oil. Saute onions in mixture until soft. Add celery, carrots, and pimientos. Add remaining ingredients; bring to a boil. Lower heat and simmer 1 hour, covered.

Garnish with grated cheese and a dollop of yogurt.

I make turkey chili and it is really good and very easy.


Large onion
1 pound turkey (you could use regualr meat)
14.5 oz can stewed tomatoes
1 small can tomatoe sauce
package of chili mix (powder)
1 large can dark kidney beans

Dice up one large onion and saute in a pan. When onions are tender, add turkey and cook until done. Add the stewed tomatoes, tomatoe sauce, kidney beans, chili powder. Cook for about 15-20 mintues. I serve it over rice.

Edited to say: A one cup serving of the chili is 3 WW points!

Karen,
This is what I figured out........Four-Five Servings servings

Beans 100 calories, 0 fat, 6 grams fiber= 1 pt per serving

Turkey 120 calories, 1 fat, 0 fiber= 2 pts per serving

The tomatoes, onion and powder are very minimal if any points.

So I figured 14 points for the whole recipe, not including rice.sorry! Although my FI did have huge portions so you might be able to get more than 5 servings out of the recipe.

Don't forget to buy the turkey that has only 1 gram of fat!

Thanks!!! I'm running to the grocery store as we speak. I'm super-motivated. FI just left to watch the Jets game, so while he's gone I'm tossing out the old Xmas cookies and goodies and replacing them with veggies!!!

Jodi - Is 3 WW points good??? Im not on the program, yet... I have one more year to loose weight before the wedding (I just know Ill be joining in Jan of 2004 )

Yes, 3 points is great for a meal. Most people get between 18-26 a day depending on their weight. This is such a good recipe even if you do no eat it with rice.
