Chopped Turkey

I know to post this is the recipe section but I figured more people would see it here.

Does anyone know of a good, easy to prepare recipe using chopped turkey meat?

I was going to make turkey burgers, but that is boring.

So any ideas you have would be greatly appreciated.
Thanks,
Scott

Turkey Chili?

Rachel Ray made Chili Burgers the other day with ground beef but I think you could substitute for Turkey. Check FoodTV.com for the recipe it looked really good - grated onion, grill seasoning, cumin, chili powder, thyme. hmmm

I make taco salad with it...no chips for us, just lettuce, cheese, sour cream, salsa and olives.

It's YUMMY!

I do this but I put it over rice. I call it Taco's Over Rice:

Rice, then ground turkey (with all the taco seasonings), then lettuce, tomato, chopped onion, grated cheese, salsa, crushed tostitos, and a little ranch dressing (instead of sour cream!).

it's DELICIOUS! Don't knock it till ya try it.

I make something with pasta. got it from my mom. This is usually our Monday meal since it's easy.

Cook the turkey. drain fat

Then stir in one can of Diced tomatoes and one can of Tomato sauce (Usually use the contadina Italian seasoning one... the 8 or 8 1/2 oz I forget, or I use the different flavored diced tomatoes) And sometimes add my own seasoning.

cook pasta (usually like ziti or rotini... something to grab the sauce) Stir it all togther and serve.

Turkey meatloaf....just replace your favorite recipe with turkey!

I do a meatloaf using:
1/2 jar of salsa (about 1 cup)
1/3 cup of oatmeal
1 egg white
1 lb ground turkey

Mix together, throw in a loaf pan and cook at 350 for 45 minutes. The salsa keeps it moist and gives it a little more flavor w/o having to chop veggies. Got it from my WW meeting 1 3oz slice = 4 pts.

I make turkey tacos. Just brown the turkey, add Old El Paso taco seasoning, and Old El Paso taco sauce to keep the meat juicy. I then shred some lettuce, get a Mexican cheese blend, dice tomatoes, olives, and whatever else you want to add. Quick meal, and one of our favorites!

I brown the turkey and throw it in the sauce with pasta. Sometimes we add turkey sausage, too.

I always make turkey meatloaf w/ ground turkey.
My recipe for it is different than w/ red meat.
I use oats as a filler (instead of breadcrumbs), cumin, parsley, onion, salt & pepper. Play around w/ ingredients if you'd like.
For the topping, instead of regular gravy, I mix Chili Sauce, some brown sugar, & dry mustard (like a teaspoonful). It's such a good topping- sweet & tangy.
