Re: christmas cookies?

I have a ton, but I can't post them right now.

Every year, my mom and I spend an entire weekend doing nothing but baking. We make hundreds of cookies and at least 8-10 different types, including but not limited to:

Neopolitians (aka Rainbow cookies)
fudge
toffee
peanut butter blossoms
oatmeal
oatmeal raisin
raspberry bars
lemon bars
snickerdoodles
chip and dip cookies
brownie cookies
pignoli cookies
thumbprint cookies

We're doing it this weekend, so after when all the recipes are out, I can send you some.

These are my favorite that my aunt makes every year.

They are called Anginetti (Italian Lemon Drop Cookies):

1/2 cup sugar
1/4 cup vegetable shortening
3 large eggs
1 1/2 teaspoons lemon extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
FROSTING
3 cups confectioners' sugar
1/4 cup water
1 teaspoon lemon extract

1. Preheat oven to 350°F.
2. For cookies, cream together sugar and shortening.
3. Add eggs and lemon extract and beat well.
4. Add flour, baking powder and salt; Mix well.
5. The dough should be soft and sticky.
6. With a small cookie scoop, drop dough onto a slightly greased cookie sheet or baking stone, spacing them about 2-inches apart.
7. Bake for about 12-15 minutes, or until firm and lightly brown.
8. Remove cookies from cookie sheet and allow to cool completely on wire racks.
9. For frosting, combine confectioners' sugar, water and lemon extract and mix until smooth.
10. Frost the tops of each cookie with a metal spatula.
11. Allow cookies to dry before stacking.
12. Store in an airtight container.

I have an awesome recipe for just plain sugar/butter cookies at home. I'll post it when I get home.

If you're making any cookies with raisins, definitely buy the Sun Maid Baking Raisins instead of using refular raisins. They're more moist and hold up really well in cookies. Regular raisins tend to get a little dry/hard when I use them in cookies.

You usually find them near the baking stuff, but sometimes stores keep them near all of the other raisins/craisins/prunes.

My daughter and I make cookies together every year. We are doing our cookies this coming Saturday

Here are some of our fav recipes that we will be doing this weekend. ENJOY!

Hershey Kiss Peanut Butter Cookies

48 HERSHEY'S KISSES Brand Milk Chocolates
1/2 cup shortening
3/4 cup REESE'S Creamy Peanut Butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar

Directions:1. Heat oven to 375°F. Remove wrappers from chocolates.

2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.

3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
