Re: Christmas Eve Menu ideas
Last year I made a tasting menu - small portions of several dishes:
started out with fresh mozz & tomato/basil rice balls small piece of lasagna broiled filet of flounder with lemon butter linguine w/ white clam sauce dessert was mini pastries. --- i got a little help from an italian market, where I bought the rice balls and lasagna. The rest I made myself. It was delicious, and the 4 people we had over for dinner loved it. I even made little menu's for each place setting.

Italians always do all fish for Christmas eve. So i say shrimp scampi maybe some Lobster tails. With Linguine & white clam sauce. Of course you can do veggies like stuffed artichokes etc. But no meat for us.

Re: Christmas Eve Menu ideas
hmmmmm...... As a side dish I make acorn squash all the time cause its SUPER easy and SOOOOOOO GOOD!
Cut the Acorn in half. Scoop out the seeds in the middle. Slice the bottoms so they can stand with out tipping over. Add 1 tablespoon of butter and 1 teaspoon of brown sugar. Bake on 400 for an hour or so. When the tops brown a little... thats when they are done.
Serve and stir the inside so it all mixes in.
Enjoy!

Lauren, I don't know if you like Cuban food but my Christmas Eve menu goes like this:
Yucca Rice and Beans Roasted Pork (MY FAVE)
Then in honor of my Dad who's Italian, we also have: Sauteed bakala Lasagna
Of course we have hor'deorves beforehand and fresh homemade sangria before and during our meal.
