Last year we had a big bbq, quesadillas, empenadas, guacamole, rice and beans, corn salad with a lime vinagrette, bbq'd chicken, also burgers and hot dogs, we love any excuse for a bbq!!

Re: Cinco de mayo dinner
Chicken fajitas? I make them with sauteed chicken breast cut up in white wine and olive oil (I have to guinea it up a bit), onions, red, green, and yellow peppers, with mexican or yellow rice and black beans on the side, and homemade guacamole and sour cream.
Another recipe I'm dying to try is Mexican Souvlaki, which is basically our killer souvlaki recipe, but instead of lemon juice and oregano in the marinade, lime juice and cilantro, and an avocado cream instead of yogurt.
And you can never go wrong with a marinated skirt steak and enchilada combo mmmmmmmmmm.

Re: Cinco de mayo dinner
I just told FH in honor of cinco de mayo, I will be making 'taco bell' or if he wants something a little more 'gourmet' we can have chipotle.
Can anyone tell I really don't like to cook?

I think I've decided on Chimichangas, Margaritas for me and Coronas for FH.
