DH and I are renting a cabin with a bunch of our friends in a a couple of weekends. We will probably be grilling a lot but what are some meals that I can prepare? I don't want to be in the kitchen the whole time so I'm thinking of meals such as lasagna that I can prep and just throw in the oven. Side dishes/entrees recommendations?
The last time we did this I made ropa vieja, rice & beans. I also made cookie dough before hand so we just had to bake them there.
eta: woops, meant to post in NW but I could use 2011 help too!

We were at a cabin a few weeks ago also and we made a whole wheat pasta with marinera sauce, musherooms, peppers, basil and some other good stuff, I made a salad too, rice and we grilled too.

Lasagna's a great one, or maybe pasta w/ meat sauce, you can mix it all together and then heat it up. Make some salad also, maybe some garlic bread, just prep it and then heat it up when you're there.
Don't forget dessert as well

baked ziti is really easy to prepare. Just put it in one of the tin baking dishes and pop it in the oven when you're ready. Also, the bubba burgers are pre shaped and ready to grill. Side dishes would be something that isn't going to spoil, maybe a pasta salad? Cucumber & onion sald?

I think any kind of roast would be good (loin of pork or roast beef or something). You can prepare some sides like roasted potatoes and/or sauteed string beans/carrots and then just throw the roast in the oven and let it cook for a few hrs
A chili might be nice too. You can do all the prep work beforehand and then just throw it in a dutch oven or crock pot and let it simmer

We like to do slow cooker pulled pork when we have a big group....its cheap and it goes a long way. Best part is you just dump it in the crockpot with seasoning and let it do its thing until ready to shred.
