COOKING HELP!

I won't be able to see my dad on easter with all of the places we have to go so I'm having my dad and my FIL's over on Saturday for lunch. I don't know what to make!! My FMIL says to 'make' cold cuts, but I wanted to cook something nice. Any suggestions?

Wish we had a food board

Re: COOKING HELP!

I want to make a hot lunch. We're having ham on sunday so I don't want to make that. I don't think I feel like bbq-ing, but that is a good idea. Actually, I'd love to make something in advance that I could just heat up on saturday.

Or you could make a roast beef or chicken and cook it rotiserre style on the bbq,.

or eggplant parm with ziti..

or chicken marsala!

Re: COOKING HELP!

Chicken parm sounds good. Maybe I could make that with penne alla vodka? If I cook the chicken on Friday, should I wait until Saturday to add the sauce and cheese and then just put it in the oven?

Re: COOKING HELP!

Yes i would just fry up the cutlets on friday then just add sauce and cheese and heat on saturday, if the cutlets sit in the sauce to long it will be soggy..
