Re: crock pot reciepes

this is reallllly good - white chicken chili

We used about half of everything since the recipe says it serves 12.

2 lbs boneless, skinless chicken breast, cubed (uncooked)
2 15 oz. cans diced tomatoes
2 15 oz. cans cannellini beans (white kidney beans), drained and rinsed
1/2 c. chicken broth
1 small onion, chopped
2 garlic cloves, minced
2 jalapeno peppers, seeds removed, minced
1 14 oz. can yellow corn, drained
2 teaspoons cumin
2 teaspoons dried oregano
1/4 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 c. sharp cheddar cheese for garnish

1. Mash 1/2 c cannellini beans with fork.
2. Place all ingredients (except cheese) including mashed beans in slow cooker and stir to combine.
3. Cover and cook on HIGH for 3 hours. (We did high for 3 hours and then a few hours after on low. We were nervous about there being raw chicken in there). But I'm almost positive it was cooked after the 3 hours.)
4. Top with cheese.

Re: crock pot reciepes

This is a WW one. I made this last week, it was delicious.

Slow Cooker Lentil soup

2 medium carrot(s), peeled, cut into large chunks
2 stalk(s) (medium) celery, ribs, cut into large chunks
1 medium onion(s), cut into large chunks
2 clove(s) (medium) garlic clove(s), minced
2 cup(s) dry lentils, picked over
2 leaf/leaves bay leaf
1/2 tsp dried thyme, crushed
1/2 tsp table salt, or to taste
1/4 tsp black pepper, or to taste
8 cup(s) canned chicken broth
4 oz Canadian-style bacon, diced (4 or 5 slices)

Instructions

Place ingredients in a 4- to 5-quart slow cooker in the following order: carrots, celery, onion, garlic, lentils, bay leaves, thyme, salt, pepper and broth. Cover slow cooker; cook on low setting for 6 hours. Uncover, stir in bacon and heat for 30 minutes more; remove bay leaves. Yields about 1 1/2 cups per serving.

Notes

To thicken soup, remove 1 cup of cooked lentils and puree in food processor; stir back into soup.

For a lighter flavor, replace 4 cups of chicken broth with 4 cups of water.

To make this vegetarian, substitute a cup of sliced shiitake mushroom caps for the Canadian bacon and use vegetable broth (could affect PointsPlus values).

For additional flavor, top each serving with a splash of white wine vinegar.

Re: crock pot reciepes

i love making chicken soup in my crock pot... SO easy breezy!!!

1 package of boneless chicken breast
4-6 cans of chicken broth
1 bunch of celery sliced
1 package of carrotts, peeled and sliced
1 whole onion sliced
3 bay leaves

a pinch of garlic powder

just put it all together in the crockpot and add a little water (about one can). Cook on high for 6 - 8 hours!

Re: crock pot reciepes

White Beam Chili:

Ingredients:
2 pounds chicken breasts, boneless and skinless
2 cans (14 oz. size) chicken broth
1 pound canned great northern beans
1 can (10 oz. size) diced green chilies
1 teaspoon minced fresh garlic
1 tablespoon minced onion
1 teaspoon oregano
1/2 teaspoon salt (or to taste)
2 teaspoons ground cumin
1 tablespoon chili powder
cayenne pepper, optional

***Optional Garnishes***
shredded low fat cheddar cheese
lowfat sour cream
cilantro
baked tortilla chips

Turn this recipe into a puzzle! [click]

Directions:

Cook chicken in some of the chicken broth till done. Remove chicken, reserving broth; allow chicken to cool. Shred chicken with two forks. Set aside.

Dump water off of beans that have been soaking overnight. Add beans, all of the chicken broth, tomatoes, onion, garlic, seasonings and shredded chicken to a crock pot. Add more broth or water, if necessary, to cover beans.

Cook on low 10-12 hours or on high 5-6 hours till beans are tender. (Add a little more liquid, if needed, to keep beans covered.)

Also can cook on stove top in 4 qt. pan. Bring all ingredients to a boil then reduce heat and simmer until beans are done.

Serve in soup bowls, garnished with a dollop of sour cream, shredded cheese and a few coarsely crushed baked tortilla chips.

***I actually purchased the grilled chicken slices that are already cooked and just put them into this mixture for the last 10-20 minutes or so***
