FH is half German/half Irish.
I am half Danish/half Irish

Not so different! BUT .... my family includes people not related by blood - my father's closest friend is Burmese and American Indian and we celebrate Thanksgiving with them. So there are some interesting things happening there... wild rice casserole and turnips in addition to the whipped potatoes and green bean casserole.

I am half french canadian and half irish/czech/hungarian

FH is German/Irish/Scottish/French Canadian

We're both mutts!

ETA: My grandfather's wife is chinese, but they just celebrate the way we do, or not at all. Their wedding was awesome though! They even had one of those lucky dragon guys dance around!
