Monday I managed a pretty good chili Tuesday I made chicken fajitas...which were (and I quote, courtesy of d to the h) 'Your fajitas last night were slammin. They were delicious. I'd put your food up against anyone's, anytime.:
Wednesday: total bummer. I made pizza...could have been better. I am unhappy.
today is a day of redemption...the special ingredient
SHRIMP.
not sure what to do with them yet...scampi, blackened, stir fried.....
but I MUST redeem myself. I must think about this.

Grilled on skewers with a mango chutney sauce with stirfry veggies. Getting you the menu
HERE 2 Cups Red Onion -- diced 1/2 Cup Cider Vinegar 3/4 Pound Light Brown Sugar
INSTRUCTIONS Place red onion, vinegar and brown sugar in a stainless pot and bring to a simmer.
Cook for about 30 minutes.
Add diced apples, pears and curry powder and cook for a further 20 minutes (or until syrupy).
Remove from heat and add Mango.

there's an Emeril (who is annoying) recipe that is really delish. Served over rice. Yum.

eta: on the serious note, not sure if d to the h likes chutney...it seems kinda chunky and fruity...2 things that sometimes make me nauseous (it's a mouth feel thing) I'll find out if he likes it.
It would be a cool new add to my repertoire.

this week i was lazy
mon nite my mother made us chicken burgers
tues nite chicken cutlets-she dropped it off
last nite-i made chuck steak w/this mushroom gravy sauce-not great
