dinner ideas

Who's like me and gets home at 6:00-6:30 and does not want to start cooking a gourmet meal? Which means sitting down to eat at 8:00.
DH usually does the cooking - he's so good and he enjoys doing it - but I feel that I should atleast make effort :)
In a prefect world, we should take turns cooking - he does 5 days a week and I do 2 :)

Anyone have any quick, easy dinner recipes they would share???

Re: dinner ideas

I do a lot of over night marinating, bagged salads and easy side dishes. We keep it really simple during the week for the same reason.

If your DH enjoys the cooking, let him!

ETA:
I use italian & balsamic vinagarette dressing, buffalo sauce, terriaki sauce and McCormack makes some tasty meat marinades.

Re: dinner ideas

I usually make a couple of dishes that freeze nice on my free weekends so i can just defrost them and add a salad. When i am at a loss i make clams and macoroni which is so fast, chopped clams, a can of del monte, hot pepper and pasta.

Here are some staples that I use during the week.

Blackened Tuna Casear Salad
2 Tuna Steaks
Cajun Spice
Romaine Lettuce
Casear Dressing (I make my own, but you could use bottled)

Heat cast iron pan over med/high heat. Rub cajun spice over Tuna. Pan Fry for 2 minutes per side for rare. Slice and serve over salad.

Fried Pork Chops over a salad of red leaf lettuce, tomato and sliced red onion. I use good seasons italian dressing made with balsamic and olive oil.

Marianted Grilled steak served with baked potato and a veggie.

Pasta with red sauce. I will make a big pot of sauce and freeze individual servings in a ziplock bag.

Mussels

Easy Chicken
