dinner question

dinner question

I don't get over to the recipe board nearly as much as i should, and yet I really need to start cooking and planning dinners now that I am home.

I see Claud over there and Michele now and again, and I am going to start frequenting it more often. It's easy to forget that it's even here with all my parenting questions!

Maybe we can all chip in on the effort? I mean, I never cook so all the input would be new for me, but maybe some of you 'seasoned mommies' can throw a recipe up there that you cooked this week? I am sure the ones that do cook would love some new ideas.

In other words, let's try to get some more Parenting girls over to the Recipe Board! I would love to learn some tricks of the trade, and I am sure a lot of you have quick and easy tips to share for everyday cooking!

Re: dinner question

I'm not a mommy but am always pressed for time..

I like to season meat (whether it be chicken or beef, which I don't eat) like a week before and store it in the freezer.. then in the am of the day I want to make it, I just let it defrost and then an hour before dinner, I just cook it and it cooks quicker and tastes better.. or so Todd says lol

for example..

BBQ drumsticks..

I peel off the fat (only b/c I'm calorie and fat conscious,,you can leave it on if you prefer) and take 6 legs (only store in that one bag or container, what you plan on cooking for one meal, it'll be less work and easier to clean up) and I use Emeril's marinade (or whichever you prefer) and drop the legs and pour the marinade into a ziplock bag..

zip it up and that's it..

the morning of the day you want to make this for dinner, take it out to defrost and when you get home, or perhaps a couple hours before your scheduled dinner, it's thawed out and I just empty the contents of the bag into the glass baking pan and put it into the oven at 375 for an hour or until well done.. and that's it.. if you want to make a meal of it, take a couple of potatoes, sprinkle some olive oil on the aluminum and salt.. and then roll up the potatoe in the aluminum and then puch holes into it with a fork then bake everything together..

Re: dinner question

I cook every night and, to be honest, I don't use recipes. Sometimes I will look through some books or something but I never follow something exactly.

Here are some things that you may find helpful or may not. There is a magazine called Women's World at the grocery checkout and they have great menu ideas that are relatively quick sometimes. I also frequently visit allrecipes.com...I like this site for ideas because they have it broken down in to all catagories (bread, chicken, and beef and so on) and then break it down further from there. I also like that the recipes are rated because when I am in a pinch, it's great to look down the page really quick and see what I can possibly make that other people rate as 'good.'

Re: dinner question

Part of my negotiating to stay out of work longer included cooking dinner at least 4 nights a week, so I've been a regular Suzy Homemaker these days.

Since I still have about 30 pounds to lose, my recipes are all low carb, and some are WW friendly.

I doubt anyone is interested in my strict meals, but if so I'd be happy to share.

Re: dinner question

Another easy recipe is:

chop tomatoes and some olives, and toss them with chopped cilantro.

broil/bake salmon, and then top it off with the tomato topping above.

Serve with couscous/rice, etc.

I am not a mommy either, but I am also trying to perfect my cooking skills. I post from time to time on th recipe board.

I agree with Marcella that you should season your meat ahead of time, it makes it taste so much better.

Re: dinner question

I have a delicious chicken soup recipe that is easy to make, can be frozen, and is delish! I'll have to dig it up and post-it later. I add some ditalini pasta to it and with a salad makes such a filling meal on a cold day.

See, I find it a little hard because I usually have no set amount of anything and sometimes if I don't have one thing, I just subsitute it for something else. I definitely think once you can get comfortable making things, that you will be able to exchange items and create whole new dishes.

I asked Claud to post her gravy recipe so I am helping you cook Jenny

I will post some more recipes, although I am not a low carb kinda gal, as evident by my big fat butt.

Re: dinner question

OK, I'm not even close to being a mommy, but I'm a lurker. If there is one thing that I can tell you to get to make your cooking life easier, it's a FoodSaver. Not only will you be able to marinate things much more quickly, you'll be able to make huge meals and freeze the portions without worrying about freezer burn. Same thing goes for putting things in the fridge (things will not spoil for the longest time). Buy things in bulk (usually cheaper that way, too), and portion it out. You can do all the prep work ahead of time and freeze or refrigerate things, and when you need to quickly come up with dinner, all you need to do is cook or reheat, but it won't taste like it's been sitting around forever.
