Re: DINNER SIDE DISHES

Not a side dish - But I made an awesome Chicken Chile Last night!!

Chicken brst cut up into bite size pcs.
2 red peppers diced
1 Yellow Pepper Diced
1 Orange Pepper Diced
2 Cans of Cannolini Beans
2 Cans Petite Cut Diced Tomatoes (flavored ok)
Tuns of Cumin (to taste)
Heaping Tablespoon Minced Garlic
Salt
Pepper
Onion Powder (to taste)

Cook for 1 Hour on Med heat - Serve with Baked Tostitos and Low Fat Shredded Cheddar

If you like SPICY...Add Half of a Jabanero Pepper Minced - You do not want to bite into one of those!!!
And Make sure you do not touch your eyes after handling - Made that mistake last night!!!

MMMMMMmmmm!!! Good for you too!!

I usually add half of a Jabanero pepper for some spice - but it wont be spicy otherwise!

I've recently started buying no yolk egg noodles. my mom had them all the time when i was young and I have forgotten about them. nice easy, pretty healthy side dish.

and cumin is not spicy at all, BEST spice in the world. i use it alllll the time, especially in my skirt steak marinade. (soy sauce, honey, garlic and cumin, mix it up and throw it in a bag with the skirt steaks, marinade for 2 hours or as long as you can, and grill. YUMMMM.)

It is an awesome marinade. I don't really measure anything - it's mostly soy sauce (try to use low sodium if you can otherwise it's a little salty, especially with the cumin) .... about 1.5 tsp of garlic (from a jar), 2 tbsp of honey - more if you want - and a bunch of cumin, i just shake it in the bag till i like the amount i see :) yummmy.
