Well, get the Unoffical Guide to WDW 2005. that's the bets resource by far. Where are you staying?
One of the best dinner options is the California Grill. It's on the 15th floor of the Contemporary. Get a reservation for 1 hour before the fireworks. During the fireworks they dim the lights and pipe in the music form the fireworks and you have an AMAZING view! FH took me there the ngiht before he proposed and he said it was so romantic he wished he'd brought the ring with him to restarant b/c he would have abandoned his other plans and proposed to me right then and there. The menu is 'market inspired' so it changed and everything is fresh. FH loves the pork. We both also love the lava cake. it's so good. Be prepared to spend $80-150 for two (depending if you oorder appetizer, dessert, drinks, and how much). We usually spend about $100. (You can also go here just to sit in the lounge for drinks)
You can also check out pleasure island. Since you're staying on property you probably have ultimate park hoppers, right? You cna get into pleasure island for free. We're not big dance people, but I've heard BET soundstage is amazing. We had so much fun in Adventurer's Club, and immersive impriv comedy venue. It's modeled on a 30's exploerer's club and there are characters and you interact with them and become part of the show. The drinks are also great. Try the Kungaloosh!
We also loved comedy warehouse. They ahve several ngihtly shows and it's basically like 'whose line is it anyway' and it's a riot!
Boardwalk also has some nice clubs, I've heard but I haven't been there.
The best nightime stuff in my opinion is in the parks. SInce you're staying on prperty you can participate in e-ride nights. Now they've been doing it 3x per week I've heard. You buy tickets ($12) in advance at the hotel and you get to stay in the magic kingdom 3 hours after closing. It's SO much fun. They only let 3000 people buy tickets and they best rides are open and you really feel like you have the place to yourself. Let me tell you, there is NOTHING like riding spalsh mountain at 2am. We also rode haunted mansion 5 times ina row at midnight during a thunderstorm. We loved it!
ALso, other nighttime entertainment.. Don't miss the Spectromagic parade and Wishes Fireworks. if you're leaving right after spectromagic, position yourself near the park exit because this parade runs the opposite direction of the toher parades, it starts near the park exit, so once the parade passes you, you cna leave, beating the crowds. No matter what anyone says, the BEST place to watch Wishes in directly in front of the castle. It's amazing. Other place are good, like the tomorrowland bridge, but you miss the overall effect with the castle as the centerpiece of the show. I'm not a huge fan of Illumination (at Epcot) but it's good.
At MGM, Fantasmic! Is worth the admission all by itself. They do ti once or twice per night. You have to be there at LEAST an hour before the show, and it's well wroth it. What we did? We got takeout from the japanese restaraunt in Epcot, hopped on te boat to MGM form international gateway and were the envy of all those around us while we waited for the show to begin. Mmmm tempura.
Fh and I also spent a night when we were tired and had to elave the next morning in teh hotel arcade. there were no kids around and it was a lot of fun. Also, some hotels have jacuzzis and stuff, so that's also good nighttime fun. Don't forget to schedule an afternoon nap if you plan on going out again at night!

Which resort are you staying at?
I don't think they've had e-ride night for months but check out allearsnet.com - LOTS of good info ...
I would recommend getting tickets for Mickey's Not So Scary Halloween Party ... you get to 'Trick or Treat', the parade is really good and they take your picture for free & send it home for you.
HAVE FUN!!!!!

I am so jealous. My FI and I just got back Sept. 24, I am so sad to be back. We stayed at the Polynesian and LOVED it!!! My fav. places to eat have been in EPCOT. I am in love with Mexico, I love the margaritas, the food and the romantic atmosphere. Canada has great steaks.....Itay has great fett. alfredo, really all of the places are pretty good. The weather was amazing when we went there...it was still so nice and warm, I loved to eat at a restaurant and then get dessert outside at one of the street vendors, and then watch the fireworks. Ahhhh I miss it so much
