Does anyone have a good pumpkin pie recipe??

I need one! I'm in charge of making a pumpkin pie for a pot luck dinner.

Have I mentioned that I don't own a mixer and I have never baked anything before?

Awesome.

So 'easy' would be good.

I use one that's delicious and homemade and so easy! It's on the back of the Libby's pumpkin can. NOT the pumpkin pie mix. Get the canned pumpkin and follow the recipe on the back. It comes out great!

Very! I make it every year! Just make sure you have the spices at home or pick them up while you're at the store. Everything is on the can. Just don't forget the pie shell in the freezer section!

of course you can. This is seriously the easiest pumpkin pie. You have to buy libby's easy pumpkin pie puree (see picture below). Then you use this recipe. It should also be on the back of the can

1 (30-ounce) can LIBBY'S® Easy Pumpkin Pie Mix
2/3 cup (5-ounce can) Evaporated Milk
2 large eggs, beaten
1 (9-inch) unbaked 9-inch deep-dish pie shell (4-cup volume)
Mix pumpkin pie mix, evaporated milk and eggs in large bowl.
Pour into pie shell
Bake in preheated 425°F. oven for 15 minutes. Reduce temperature to 350° F.; bake 50 to 60 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

I don't make my own pie shell, too much work, I actually use the store bought graham cracker crust to make this but the recipe calls for an uncooked pie shell, you can buy that in your grocery store's frozen section.

Re: Does anyone have a good pumpkin pie recipe??

this one looks fairly easy..i haven't tried it but the recipe description says the pie is lighter in texture and the buttermilk gives it a little twist

Buttermilk Pumpkin Pie

RECIPE INGREDIENTS:

1/2 recipe, 1 disk, Basic Flaky Pie Crust Dough (see recipe)

3 eggs

1 egg yolk

3/4 cup firmly packed light brown sugar

2 tablespoons all-purpose flour

1 teaspoon pumpkin pie spice

1 teaspoon vanilla extract

3/4 cup canned pumpkin puree

3 tablespoons melted butter

1 1/4 cups buttermilk

Roll out dough on lightly floured surface to 12 inch round. Carefully transfer to 9-inch pie pan. Press into pan. Trim and decoratively crimp edges. Let stand in refrigerator for 2 hours or over night. Freeze until firm, about 15 minutes. Preheat oven to 400 degrees F. Bake crust until just golden, about 15 minutes. Reduce oven temperature to 350 degrees F.

Meanwhile, whisk eggs, egg yolk and sugar in large bowl until blended. Mix in flour, pumpkin pie spice and vanilla. Stir in pumpkin and butter, then buttermilk. Pour filling into crust. Bake until set (center will puff slightly) about 45 minutes. Cool completely.
------------
Basic Flaky Pie Crust Dough Recipe

Makes enough for 1 double crust pie or 2 single crust pies (Serves 8)

RECIPE INGREDIENTS

2 1/2 cups all-purpose flour

1 rounded tablespoon sugar

1 rounded teaspoon salt

1/2 cup chilled unsalted butter, cut into pieces

2/3 cup frozen vegetable shortening, cut into pieces

4-6 tablespoons ice water

2 teaspoons apple cider vinegar

Combine flour, sugar and salt in food processor; pulse to blend. Add butter and shortening and cut into flour mixture using on/off turns. When mixture resemble coarse meal, transfer to large bowl. Combine 4 tablespoons ice water and cider vinegar in small bowl; pour over flour mixture. Stir with fork until moist clumps form, adding additional 2 tablespoons ice water if necessary.

Gather dough into 2 balls and flatten balls into disks. Wrap in plastic and chill 30 minutes or up to 4 days. Well-wrapped dough can be frozen up to 2 weeks. Allow dough to soften slightly at room temperature before continuing.

Re: Does anyone have a good pumpkin pie recipe??

I make this version from Shape magazine -

NO BAKE, sooo easy

1 premade graham cracker crust (don't get the lowfat one, its not as good and has like 10 less calories)
1 box instant vanilla pudding mix
1 16 oz can of pumpkin
milk (about 1/2 cup, but add a little and mix until its the right consistency)
Nutmeg
Cinnamon
All Spice

Mix together the pumpkin, pudding mix and some milk. It should be liquidy but not too much because you want it to thicken. Sprinkle the spices to taste (easy on all spice and nutmeg, they are strong). Pour into crust and chill in refridge.

DELISH!
