sautee garlic and oil in a pan...add one stick of butter per every two artichokes u make....add the breadcrumbs and parmesan cheese..mix together ..

then cut the tops and botton of the artichokes ...spread the leaves as far as they go ...make sure you get most of the leaves when u stuff it

then steam until you can pull a leaf off very easily

I don't usually measure amounts, but I've been making these for years using my mom's Italian recipe. A few yrs ago she switched from oil to I Can't Believe It's Not Butter Light spray to cut down on fat/calories while doing WW. So I started making them that way too, and you really don't miss the oil at all!

Here's what I do:

Mix Italian seasoned breadcrumbs, grated cheese (I use Pecorino Romano instead of parmesan), chopped garlic, and a little olive oil (or ICBINB Light) in a bowl.

Cut the tops off of the artichokes with a knife, then snip all the tips with poultry shears so they don't prick your fingers. Spread the leaves out and rinse with cold water. Then fill with breadcrumb mixture.

Then I steam the filled artichokes in a shallow pan with a little water surrounding them so they don't burn on the bottom. Sprinkle with a little olive oil (or again, use ICBINB Light spray) and cover. Cook over low flame until leaves are tender. Check on them often to make sure water doesn't boil away.

Hope this helps!!
