Re: Easy appetizers?

Shrimp cocktail is always easy.

I also have a recipe for a warm goat cheese salad which is easy and can be prepared in advance. Here it is

1 log goat cheese (available in Costco cheap)
mixed lettuce greens
good season's Italian dressing package made according to package with balsamic vinegar and olive oil
1 egg
breadcrumbs

Slice Goat Cheese and form into small rounds (roll around in hands and flatten - similar to making a hamburger). Sometimes goat cheese is hard to cut w/o it sticking to the knife, dental floss works really well as a substitute for a knife.

Dip goat cheese rounds in egg then in breadcrumbs. You can do this ahead of time and place the rounds in the fridge until ready to warm.

To prepare salad, wash greens, heat goat cheese in 250 degree oven for 5 minutes. Place greens on plate, top with goat cheese rounds and add dressing.

I also make a crab cake salad from Bon Appetit, if you buy the crabmeat in the can at Costco it is really good and has little cartiledge to pick through. Here is the recipe link.

Jess2 - no problem I love to cook and I am always on the prowl for good recipes, especially ones that can be made in advance so that you can spend the more time with your guests.
