Rainbow Cookies

4 eggs, separated
1 (12.5 ounce) can almond filling
1 cup sugar
2 sticks unsalted butter, softened
1 teaspoon almond extract
2 cups flour
Red, yellow, and green food coloring (either liquid or gel food coloring), as desired
2 tablespoons seedless raspberry jam
2 tablespoons apricot preserves
1 cup semisweet chocolate chips
2 tablespoons unsalted butter

1. Preheat oven to 350 degrees. Grease 3 (8-inch) square baking pans.
2. Beat egg whites until stiff; set aside.
3. In another bowl, beat almond filling, egg yolks, sugar and 2 sticks of butter until well blended. Mix in almond extract. Stir in flour. Fold in egg whites. Divide batter into three bowls. Add red food coloring to one of the bowls and blend until thoroughly mixed (add coloring slowly until you reach the desired color). Do the same thing with the yellow food coloring, and then the green. Spread the batter into the three greased pans. Bake in the oven for 12 to 15 minutes, until a toothpick inserted in the center comes out clean. Let cool completely.
4. Invert the green layer onto a tray. Spread the raspberry jam on top of the green layer. Invert the yellow layer on top and spread the apricot preserves on top. Top with the red layer. Melt the chocolate chips and the 2 tablespoons butter together in a microwave. Spread on top of the cake. Allow the chocolate the set.
5. Carefully cut the cake into 1 ¼ inch squares. To make clean cuts: Heat the knife under hot water. Wipe the knife clean after each cut. Makes about 49 cookies.

OMG I love Rainbow Cookies!!!

ReRe's Baked Mac and Cheese
(I had to take the basic steps from Allrecipes.com since I never measure anything when I cook!)

1 medium pkg (6 oz or so) elbow macaroni -- large one is better than the small one
1 pound Sharp cheddar grated (or you can buy a block of sharp cheese and grate it yourself)
3 eggs, beaten
Milk
Salt and pepper

Directions:

Cook macaroni until it is almost soft (too soft is no good, too hard is raw!) Drain the water and add 3/4 of the cheese, spices, eggs and just enough milk to bring the liquid up to the level of the still hot macaroni. Stir until the cheese is mostly melted (since the macaroni is still hot, this should take about 5- 10 minutes). Cover with aluminum foil... Bake for about 25 to 35 minutes or until the top layer starts to get hard and the middle looks whitish. Remove the foil and serve!!!!!!

Re: COOKBOOK FOR LIW SHOWER

Bacon and Cream Cheese Roll-Ups
(Annies fat cakes)

1/2 loaf white sandwich bread (square slices are best)
1 8oz package of cream cheese, softened
1 clove garlic minced
1 tsp italian seasoning blend
1 tsp dried parsley flakes
1/8 tsp pepper
1 lb bacon

1. Mix together the cream cheese, garlic, seasoning, parsley and pepper until well blended.

2. Cut the bacon slices in half.

3. Cut the crusts off the bread, and spread each slice evenly with cream cheese (I use about a heaping tablespoon per slice, then cut each slice of bread into 3 strips.

4. Roll up each strip of bread and wrap with 1/2 slice of bacon. Secure with a toothpick. I usually just keep going until I run out of bacon. This usually takes about 1/2 a loaf the bread and most of the cream cheese mixture. If you have leftover cream cheese, it is great spread on crackers or toasted bagels.

5. At this point, you can go ahead and bake them, or you can stash them in the fridge or the freezer to bake later (if baking from frozen, add about 5-10 minutes to your cooking time).

6. Bake at 375F for 15-20 minutes until the bacon is crisp. Drain on paper towels for about 5 minutes to cool a bit, and serve.

7. Get out of the way quickly, so you don't get trampled.

'Can't Stop Eating' Candy Bar Cookies

1 cup of Brown Sugar
1/2 cup of margarine
1/2 corn syrup (lite or regular)
3 teaspoons of vanilla
1 teaspoon of salt
4 cups of rolled oats (not the quick-cook kind)
1/2 cup of peanut butter
1 cup of chocolate chips

1. pre-heat oven to 350 degrees, grease a 13x9 pan
2. mix margarine and brown sugar until light and fluffy
3. Add corn syrup, vanilla, salt, and oats- mix well
4. Spread mixture in greased pan and bake 15 minutes
5. Right before removing the base from the oven, melt the peanut butter and chocolate chips together
6. Remove base from the oven, and pour PB/chocolate mixture on top.

Not too sure why they are called cookies, but they are REALLY good! Its VERY hard to have just one piece.

Pupusas Recipe

Here's how to make bean and cheese pupusas. Like most of the cooking, exact measurements are unnecessary:

1.- Obtain tortilla instant corn flour such as Maseca and mix with water until its consistency is such that the 'masa' (dough) does not stick to your hands.

2.- Use 'quesillo' (you can buy this at a mexican supermarket or replace with soft cheese. Mix until the consistency is similar to the 'masa' prepared in step 1.

3.- Take the 'masa' in your hands and make a ball about two inches in diameter. Once you finish, make a hole with your fingers, take some refriend beans and cheese mix (from step 2) and fill the hole with it.

4.- Cover the hole with the masa and flatten by using your hands in a clapping motion. This takes practice but the goal is to make a disc.

5.- Once you are done, place the pupusa on a preheated flat iron skillet. Leave it there until each side is cooked by noticing the dark spots (you need to flip the pupusa).

6.- Sit down and enjoy your pupusa.

You can always change the filling to anything u want!!! =)
