Favorite Recipes?
Just wondering if anyone had any good lo-points recipes they could post? Particularly ones that are quick-and-easy dinners. I am always at such a loss of what to eat for dinner, since I get home late and rarely have much time to cook...it's way too tempting to just order Thai!

spicy thai beef-noodle soupPrep Time | 10 min

light meals | To make a complete meal out of this rich, mildly spicy soup with hints of green onions and ginger, pair it with a mixed green salad.

Ingredients
6 oz packaged rice noodles, or vermicelli
2 tsp peanut oil
4 medium scallion(s), green and white parts, divided and chopped
1 medium jalapeno pepper(s), seeded and minced
1 Tbsp ginger root, minced
6 oz lean beef round, or sirloin, trimmed of fat and diced
7 cup fat-free beef broth
2 Tbsp low-sodium soy sauce
1/2 cup frozen green peas, baby size
2 Tbsp cilantro, chopped
1 tsp hot pepper sauce, or to taste
Instructions
Using sharp scissors, cut noodles into 3-inch (7.5 cm) pieces.
Heat oil in a medium saucepan over medium-high heat. Add white portion of onions, jalape?o and ginger and saute 1 minute. Add beef and saute until browned all over, 3 minutes, stirring constantly. Add broth and soy sauce and bring mixture to a boil.
Reduce heat to medium-low, partially cover and simmer 10 minutes (if necessary, skim fat from the surface during cooking).
Add noodles and peas and simmer until noodles are just tender, 3 minutes. Remove from heat and add green portion of scallions, cilantro and pepper sauce. Serve hot. Yields about 1 cup per serving.

light meals | Turn up the heat in this dish by using Thai chiles instead of jalapeños. If you really like spice, leave in some of the seeds. They're extremely hot and will make your mouth sizzle.

Ingredients
2 medium cooked, skinless chicken breast(s), chopped
1 medium cucumber(s), peeled, seeded and chopped
2 medium mango(es), peeled and chopped
1/3 cup reduced-calorie mayonnaise
1/4 cup fresh lime juice
1 medium jalapeno pepper(s), seeded and chopped
2 tsp fish sauce, optional
1 tsp unpacked brown sugar
4 oz packaged rice noodles, cooked, rinsed and cooled
2 small grapefruit(s), peeled with paring knife and sectioned or sliced
3 medium scallion(s), chopped
1 Tbsp sweetened coconut flakes, toasted
Instructions
In a medium bowl, toss together chicken, cucumber and mango.
To make dressing, blend ingredients in a blender until smooth. Toss with chicken salad and set aside.
To serve, divide noodles among 4 plates. Arrange grapefruit sections around noodles. Top noodles with chicken salad, sprinkle with scallions and coconut and serve.
