Well I'm either going to have them on a table indicating one per couple or have someone man that table towards the end of the reception as people are leaving.
If I run out, I run out... oh well.

you hand them out at the end of the night dont put them on the tables

yes thats how we do it in my family and so we make sure 1 per couple...they come say goodbye hand us the gift and we give them a favor

I have no idea how this is going to work, I'm not worried about it to be honest. I ordered 1 per couple, if I run out, that's not my problem...
This will be a first for my family anyway because no one's ever been to an east coast wedding.

Our favors are one per couple too, we're just putting them on the table, 6 gifts for a seating of 12 people and hoping they're smart enough to do the math
