I am making that for dinner but I am tired of the 'garlic, butter and lemon' approach. Any good fish recipes out there!!!!! Thanks!!!!!!!

Re: Filet of Sole
I don't have an exact recipe but I take fresh spinach, saute it with garlic and oil. Cool it down and mix with parmegean, bread crumb, olive oil, salt/pepper.
Lay filet flat and put mixture in center. Roll Filet up, Sprinkle some butter & bread crumb on top of roll and bake until done.
You can add red peppers, grape tomatoes, mushrooms or anything you think goes with spinach.

Re: Filet of Sole
1 cup tomato sauce 1 cup diced celery 1/2 cup chopped green bell pepper 1/2 cup diced onion 1/3 cup diced carrots 2 tablespoons lemon juice 1/2 tablespoon salt 1 pound halibut fillets (I use filet of sole)
In a small sauce pan, combine the tomato sauce, celery, green pepper, onion, carrots, lemon juice, and salt. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes.
Spoon vegetable mixture into a baking dish. Place fish filets over vegetables and spoon some of the sauce over the fish.
Bake, uncovered, at 400 degrees F (205 degrees C) for about 15 minutes or until fish flakes with a fork.
