Food related/cooking question....

Food related/cooking question....

I am having the parents and inlaws over on Sunday and was wondering what dishes (besides Pasta, my father won't eat it) can I prepare ahead of time and pop in the oven. Only so I don't have to spend all my time preparing and cooking while they are there.

Any suggestions?

That would be good but my father is a finicky old Irish man and doesn't like sauce and cheese! The nerve of that man!!!

I guess enchiladas are out of the question....ha ha

How about meat loaf? You can prepare it earlier in the day with Baked New Potatoes and Carrots.

ETA: I made individual meat loafs before.

On top of each loaf, I had a slice of bacon, thinly sliced new potatoes (I fanned them out), and baby carrots (with the leaf). For each one, I tented them with Foil and baked. It was yummy!

Roasted chicken. If you wanted to 'cheat', as I have done a couple times, you can buy one already made from Walbaums, Boston Market, etc. and then pop it in the oven in your own pan to heat it up. If you don't want to do that, it's still a fairly easy thing to prepare with mashed or baked potatoes and cranberry sauce.

great idea! since it is an all-in-one dish, you don't have to worry about all the sides.

One of my favorite things to cook is a roasted chicken.

It's something you can make in the morning/afternoon and by the time they come over, it's done.

Another fun thing you can make ahead of time is Quiche.

I saw this on 30 minute meals and it looked really good, easy to make and looks like you spent a lot of time on it:

Meatloaf Brasciole (Roll Ups)

Recipe Summary
Difficulty: Easy
Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 4 servings

1 1/2 pounds ground beef, pork and veal mix from the butcher's counter (meatloaf mix)
Salt and pepper
1/2 cup Italian bread crumbs
1 egg
2 cloves garlic, minced
1/4 small white onion, grated
2 tablespoons golden or dark raisins, chopped
3 tablespoons pine nuts, chopped
3 tablespoons grated cheese, Parmigiano or Romano
2 tablespoons chopped flat-leaf parsley
1 cup arugula leaves or baby spinach
6 slices prosciutto di Parma

Mix meat and next 10 ingredients as if you were making meatloaf. Flatten meat out on a waxed paper lined cookie sheet into a thin layer: 1/2-inch thick, 12 inches long by 6 to 8 inches wide. Cover meat with arugula or spinach, prosciutto and cheese then roll the meat, using the waxed paper to help roll up into a large log, , working across the 6 to 8-inch side, resulting in a 12-inch long log. Drizzle the log with extra-virgin olive oil to coat lightly.

Roast meatroll 20 minutes. Cut into 1-inch slices, 3 pieces per portion, and serve

How about baked ham. Some supermarkets sell the ones that are already pre-cooked with the glaze in a packet.

Oscar, can you? Is it good? Do the mashed potatoes get soggy?

Costco sells a giant Shepard's pie that you can just pop in the oven. I have sampled it and it's pretty good.

They also have these ribs that are really good. You can put them in the oven or heat them on the grill.

how about barbecue?
Maybe some steaks?

Also trader Joes has this great frozen in a box jumbo shrimp fir $11.99/package. they are called frozen garlic shrimp or something like that.
they go on a tray and in the oven for 10 minutes. They have garlic and butter in them already, and they are frozen and they come out looking marvelous!

Also just pick up their frozen mushroom risotto (add water on stovetop) and then some frozen asparagus.

get a chardonnay and you are all set

I'm doing a big spiral sliced ham for Mother's Day-- it's already cooked so it doesn't require much attention.

The roasted pork loin is a good idea too.
