Re: Found yummy recipe!

I also make a pretty decent, very easy lemon pepper meal. Thats what im making tonight. You just cube pieces of cutlet, season, cook up and then boil some thing spaghetti and mix together. You can add black olives, green olives, tomatoes, green beans, anything you like. DH and I like it plain.

I also serve italian bread with melted mozzarella on it...I know..im bad!

Delicious Easy Chicken Francese

Prep Time: 35 Minutes
Cook Time: 20 Minutes
Ready in: 55 Minutes

Ingredients
1/2 cup all-purpose flour
4 eggs, beaten
1 pound skinless, boneless chicken breast halves
1/2 cup white wine
2 cups chicken broth
1 teaspoon chopped fresh parsley
salt and pepper to taste
1/4 cup butter
2 tablespoons fresh lemon juice
1 teaspoon cornstarch

Directions
1 Coat chicken with flour, then egg beat, then saute in a large skillet until almost cooked through. Drain on paper toweling.
2 Preheat oven to 300 degrees F (150 degrees C).
3 In a medium saucepan combine the wine, broth, parsley, salt and pepper to taste, butter or margarine and lemon juice over medium low heat. Stir together while heating slowly. When butter or margarine has melted, slowly stir in cornstarch until sauce thickens slightly. Place chicken in a 9x13 inch baking dish and pour sauce over all.
4 Bake at 300 degrees F (150 degrees C) for about 10 to 15 minutes, or until chicken is cooked through and juices run clear.

***NOTE: FI uses real lemons instead of the lemon juice. Instead of chicken broth he uses water and chicken boulin cubes

Re: Found yummy recipe!

I have made that Chicken Francese recipe many times (it is from Allrecipes.com, right?) It is delicious, definitely use the fresh lemons for the juice- I use 2 whole lemons, not 2 tablespoons. It is great, my husband thinks it is way better than any chicken francese he has had in a restaurant.
