Garlic Roasted Chichen
1 ChickenWhite Wine (your favorite)
1 onion
2-3 heads of garlic
Place rinsed & dried chicken on a V-shaped rack in a roasting pan.
Peel and cut onion in half .. and place both pieces inside the chichen.
Break apart the garlic, and peel .. place as many cloves as will fit inside the chicken, scatter the rest in the bottom of the pan.
Pour white wine over the top of the bird, and make sure the roasting pan fills with the wine to about 1/2-inch deep.
Sprinkle with salt & pepper.
Bake at 350 until done .. depends on the size of the chicken.
During cooking .. check to make sure all the liquid does not cook away .. always keep the bottom of the roasting pan covered with wine.
