Gift for officiant

My officiant is also my 2nd cousin (my grandfather and her father were brothers). She has already told me she would perform our ceremony for us, but I really want to get her a nice gift. The problem is, do to the age difference, we were never close and have been talking more in the past couple of months then in our entire lives, due to the wedding.

The only things I definately know, is she is a vegetarian, has a few cats, is very into religion (but don't want to get her a religious gift since our ceremony is non-religious) and is involved in charity and fundraising.

So... what would you do??

How about a gift certificate to a spa... or somewhere like Fortunoff... or a store you know she likes (like Macy's).

Thanks girls I htink I'm gonna ask my aunt what she recommends also. Why is gift giving so difficult sometimes?! lol
