Re: girls need some help!!!!

REALLY easy:

Roasted chicken with red potatoes.

Ingredients:
Whole chicken
12 raw red potatoes
small white onion
rosemary
small lemon - cut in slices - like an orange
butter or olive oil - your choice (I use butter)
1 packet lipton onion soup mix

Directions:

NIGHT BEFORE: Rub lemon and olive oil on chicken. Stuff the chicken with rosemary and lemon slices. Or marinate it however you like - BBQ sauce, italian dressing, etc... Put in fridge and leave overnight. Or do a rub and do it day of cooking.

When ready to cook:
Chop up onions. Quarter the potatoes. Mix them together in a large ziploc baggie or large mixing bowl with onion soup mix. Add enough melted butter to coat. Mix.

Put chicken in a roasting pan, put potato mixture all around it. Bake for like an hour (ask your mom what temp to cook chicken at, I forget - until chicken is done. Potatoes will be so soft and yummy!!! It seems long, but it's not! It's SOOOO easy!!!

Re: girls need some help!!!!

Here is my recipe for chicken francaise..it is very simple

-in a bowl mix two eggs, 1/4 cup of milk and parmesan cheese

-in another bowl put flour and mix it with salt and pepper.

-take the chicken and put it in the flour first and then the eggs(yes its the opposite of chicken cutlets)

-then in a frying pan put olive oil and let it heat up, and then put the chicken in. Let it cook for about 2-4 mins on each side or until golden brown

-take out the chicken (you can put it on a plate with paper towels to absorb some of the oil

-then in the pan you leave the oil you cooked in and to it you will add:

-1/4 cup of flour mixed in with butter, 1 full lemon squeezed, 1/4 cup of chicken broth, 1/4 cup of dry white wine(i like using pinot grigio) it gives it a great taste, then add salt and pepper...You put the chicken back in and let it simmer for just a few short mins...What i do though is taste it to see if anything more has to be added, sometimes you'll think it needs more wine or chicken broth or even butter.

It is also a very easy dish to correct...if the sauce is too thick you can add more chicken broth or white wine, or even water if you don't think it needs either...If its too watery add a little bit more flour.

What i also like to do is to use the francaise sauce for the pasta...After taking out the chicken and after pasta is boiled, just mix it in the pan in the francaise sauce.

Re: girls need some help!!!!

Oven Temperature: 375 Degrees

Ingredients:
(For Each Layer- There are Three)

4 Eggs
1 Cup of Sugar
1 Cup of Flour
2 Sticks of Butter or Margarine melted
1 Teaspoon of Orange Rind
3 Teaspoons of Almond Flavor

Grease and Flour 1' lip pan.
*I find an 11.5 x 17' pan works best

Beat eggs and sugar well
add flour, orange rind, melted margarine
Mix well and add food coloring (red, yellow, green being the traditional)
bake 10-15 minutes

Between the layers spread apricot jam (not too much!). When all the layers are together, cut them into 1.5' strips. Melt chocolate chips in a double boiler with 2 drops of oil mixed in. Spread on top, and when the chocolate hardens cut into cookie size pieces.

Seems complicated, but it really isnt at all.

Re: girls need some help!!!!

No Fail Alla Vodka!!!

1 pound penne

2 large cloves garlic

2 tablespoons butter

2 cups tomato puree

1/4 cup vodka

Salt to taste

Hot red pepper flakes to taste

1/2 cup heavy cream

For the penne, bring at least 4 quarts of water to a boil with at least 1 heaping tablespoon of salt.

Meanwhile, over medium-low heat, cook the garlic in the butter for about 2 minutes, until soft but not browned.

Add the tomato puree and the vodka. Bring to a simmer and let simmer briskly for 3 minutes. (this cooks off the alcohol.)

Season to taste with salt and hot pepper flakes, overseasoning slightly to account for the cream that will be added.

Put the penne to cook and while it is boiling, add the cream to the tomato sauce and simmer 2 or 3 minutes.

Drain the pasta well, toss with the sauce and serve immediately.
