Re: girls who love to cook

Here is my chili recipe I make many variations of this. FH likes it served over pasta or I like to put it on top of sauted spinach.

Ingredients

1 packet McCormick Chili dry seasoning mix (I like to use the “Hot” one, but they make mild too.)
1-2 tablespoons chili powder to taste
1 can kidney beans
2 clove(s) garlic clove(s)
1 onion chopped
1 jalapeno chopped (optional)
1 envelope onion soup, dry mix
1 can condensed tomato soup
1 small can tomato sauce
15 oz can diced tomatoes ( I like to use the one with green chilies)
1 1/3 pound(s) uncooked ground turkey breast
Instructions

Spray non stick pan with cooking spray saute onions until soft add garlic (and jalapeño if desired). Add turkey meat breaking it up with a spoon stir in chili packet, chili powder, and onion soup mix. Mix very well with the turkey as it cooks breaking up the meat. Add canned ingredients and simmer for 30-40 minutes.

Re: girls who love to cook

This one is SUPER easy, quick and basically inexpensive. This also works if your making a small portion for just you and the FH, or a bunch of people like my friends and I at 'Friday Night Dinner'.

1 box of Mostaccioli ( it looks like penne only its smooth, no ridges)

1 package of Hillshire Farms Smoked Sausage ( this is the kind of sausage i like, but you can probably use whatever sausage that you enjoy)

1-2 heads of Broccoli ( also to taste, if you like more add more..you can also use different greens..maybe spinach..)

Heavy Cream

Parmesan Cheese ( pre-grated..whatever brand you prefer)
(First you should boil the water for the pasta as this really takes the most time)

In a large skillet cover the bottom of the pan with Olive Oil. Cut the broccoli into bite sized pieces same with the sausage. (I like to cut the sausage then cut it again in half to yield more pieces out of one package.) Place the Sausage and Broccoli in the pan together and let cook. Every once in a while stir the broccoli and make sure the sausage gets browned on both sides.

After the pasta is done cooking measure out about 2 cups of Heavy Cream and a half a cup of parm cheese. combine and stir until the mixture is thick. Add more cream or more parm to adjust the thickness. It looks weird at first, but once the mixture is heated up it will be DELIGHTFUL!!

Drain the pasta and turn off the skillet. In a Large mixing bowl add the pasta, sausage and broccoli then add the parm cream sauce. Mix all together until everything is covered in the yumminess. and enjoy.

I like a nice glass of wine with this and if im feeling adventurous i will make my home made garlc bread :)

Re: girls who love to cook

Not necessarily my fav. recipe, but it's what I made tonight; plus it's tasty, and low-fat :) I also created it myself when I was 14.

Dijon Glazed Chicken
2 TBS. dijon mustard
1 TBS. brown sugar
1 TBS. honey
1 TBS. grated ginger (fresh is best)
2 boneless skinless chicken breasts

Mix the glaze ingredients together and pour over top of the chicken. Bake a 350 for 15-20 min or until chicken is done.

I like to serve it with rice and a veg. Tonight's veg du jour was dilled carrots. Slice carrots, top with a smidgeon of butter and dried dill. Microwave until desired crunch (or lack there of) has been reached, stir, eat.

lol nope i dont think there is a low fat version of this recipe that would make it taste the same. But Its not like i eat this every night either. Like i said i made this last friday when me, FH, and a bunch of our friends were having our weekly friday night dinner. Its especially good cause you can really use the pasta and sauce with any other ingredient. Leftovers are AMAZING!!

Re: girls who love to cook

LUV food!!!! I have many favorite recipes! Here is one of many:

Ingredients:
1 cup chopped onion
1 cup chopped green bell pepper
3 medium cloves garlic minced
3 tablespoons olive oil
2 cans (14.5 ounces each) stewed tomatoes
2 teaspoons leaf oregano, crumbled
2 teaspoons salt
1/2 teaspoon pepper, or to taste
1 bay leaf
1 chicken, about 3 pounds, cut up
3/4 cup dry red wine

Preparation:
Heat olive oil over medium heat in a large skillet. Brown chicken on all sides in hot oil, about 10 minutes. Remove chicken and drain off excess grease, leaving a tablespoon or two. Add chopped onion, green pepper, and minced garlic to hot skillet; sauté until onion is tender. Stir in tomatoes, wine, oregano, salt, pepper, and bay leaf. Add chicken back to sauce and bring to a boil. Reduce heat, cover, and simmer for about 45 minutes, or until chicken is tender. Discard bay leaf and serve with hot cooked spaghetti or other pasta.

Grandpa's Roasted Potatoes:

small red potatoes (enough to feed the group)
yellow onions - or red
EVOO
Dried Oregano
Dried Basil
Salt
Pepper
garlic powder
onion powder

Cut the red potatoes & onions in quarters (eighths if that's still too big, you want them to be basically bite size).
Place on a baking pan - or in any large pan, like a jelly roll pan, make sure there is only one layer of potatoes.
Cover in EVOO (yes cover, you want them to be covered).
Add dried oregano, basil, garlic powder, onion powder, salt & pepper.... It will honestly be more than you think is necessary of all, but that's what makes it delish! I usually use less salt just because FH and I both have high blood pressure.
Bake in middle of the oven on 375-400* for about 45 min or until potatoes are done (use the old stick a fork in it test). To make extra crispy raise to BROIL for last 5-10 min.

LOVVVVE my stuffed peppers! :)

4 - 5 red/yellow/green peppers
1 yellow onion (minced)
1 lb turkey meat
1 package of Carolina rice pilaf
1 can diced tomatoes with garlic and basil
1 tsp minced garlic

1. Pre-heat oven to 400 degrees. Cut off top of peppers and take out all the seeds. Place peppers in a large bowl and put a little water on the bottom. Cover with saran wrap and microwave for 5 mins (cuts down on time!) At same time, start cooking the rice pilaf (follow recipe on the package)
2. while peppers are cooking, create filling by sauteeing garlic and onions in a little bit of olive oil.
3. add turkey meat. cook until brown
4. add diced tomatoes and let simmer until rice is cooked.
5. add rice and mix all together
6. add filing into each pepper and place into oven in a glass baking dish (pyrex) with a little water on the bottom for 5 minutes
7. add cheese to top and put back in over for 5 - 7 minutes or until cheese is all melted

Re: girls who love to cook

FH and my fav. Meal... i try not to make it too much so we dont get sick of it... Even FHs dad... a serious food critic ( especially italian food LOVES it and asks me to make it all the time....

EGGPLANT ROLLATINI

2 eggplants peels and sliced thin
2 eggs beaten
Italian Style Bread Crumbs
1-1/2 cup greated parmesan cheese
1- 28 oz ricotta cheese
1/2 pound prosciutto
1/2 cup mozzarella cheese
1-1/2 jars vodka sauce

Preheat oven to 350 degrees

Chop up prosciutto and mix with ricotta cheese as your filling

Mix parmesan cheese with the bread crumbs in large dish
cover sliced egg plant with the egg and bread crumb mixture and fry the eggplant.

Place finished eggplant on plate covered with paper towel to remove excess oil. Continue process until all eggplant is lightly fried ( eggplant does not need to be fully cooked)

Roll each eggplant with ricotta mixture and place in large baking dish.

Cover entire dish with vodka sauce and sprinkle mozz. cheese on top.

Place in oven for 10- 15 min or untill cheese is fully melted.

Heat remaining vodka sauce to use as extra sauce when eggplants are finished...

Its a pretty simple reciepe but it comes out SOOOOO GOOD!!!!!

Re: girls who love to cook

Obsessed with chimichurri sauce at the moment and it's so quick and easy and keeps in the fridge for a few days too

Chimichurri Sauce:
-1 cup lightly packed chopped flat leaf parsley
- 3 to 5 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon chili pepper flakes
- 2 tablespoons fresh oregano leaves (optional)
- 2 tablespoons shallot or onion, minced
- 3/4 cup olive oil
- 3 tablespoons red wine vinegar
- 3 tablespoons lemon juice

You can use a food processor to combine (don't blend it too much, it should be a little rustic) but I never do since I hate to clean the processor!

I just mince the herbs, garlic, onion and whisk it with the liquids.

YUMMY on grilled flank steak, chicken breasts, shrimp, on yellow rice, everything!
