Re: girls who love to cook

I love cooking but Im one of those throw it together gals...i don't recipes written down and i dont measure anything!

But...here goes!

One of my fav things to make is shrimp scampi:

Peeled, Deveined Raw Shrimp (2lbs feeds 4-6 ppl)
Olive Oil
Garlic
Fresh Lemon
Fresh Parsley
Crushed Red Pepper
Salt and Pepper
Butter
Breadcrumbs

Preheat oven to 350-375, depends on your oven.

Take a baking dish, and literally combine all ingredients together except for the butter and breadcrumb, as much as you like! I'm heavy on the garlic and red pepper flakes. Go a little heavy on the olive oil too because you really want to coat everything and have extra for the sauce.

Pout breadcrumbs on top...sprinkle a good coating.. i use wheatcrumbs.

Cut up tablespoon size pieces of the butter and or margarine...you need a good amount, I usually use a stick..half butter half margarine for 2lbs of shrimp.

Place these cubes on top of breadcrumbs evenly so that all the butter will melt in the oven and coat evenly.

Cook in oven about 20-25 mins depending on your oven...shrimp will be opaque and breadcrumbs will be brown adn everything will be bubbling

We like to serve over rice! All the extra breadcrumbs, oil and butter makes a sauce that coats the rice...yummmy!

Re: girls who love to cook

This is the best dip I've ever had, I got the recipe from FSIL.

Swiss Dip:

1/2 cup mayo
1 cup grated swiss cheese
1 pkg. cream cheese, softened
2 Tbl. chopped green onions
8 slices crumbled bacon (I use the Hormel packaged bacon bits, found by salad dressings)
1/2 cup Ritz crackers crumbled on top

Mix together and bake at 350 degrees for 20 minutes.

(for a larger portion, double the recipe)

This one is SUPER easy, quick and basically inexpensive. This also works if your making a small portion for just you and the FH, or a bunch of people like my friends and I at 'Friday Night Dinner'.

1 box of Mostaccioli ( it looks like penne only its smooth, no ridges)

1 package of Hillshire Farms Smoked Sausage ( this is the kind of sausage i like, but you can probably use whatever sausage that you enjoy)

1-2 heads of Broccoli ( also to taste, if you like more add more..you can also use different greens..maybe spinach..)

Heavy Cream

Parmesan Cheese ( pre-grated..whatever brand you prefer)
(First you should boil the water for the pasta as this really takes the most time)

In a large skillet cover the bottom of the pan with Olive Oil. Cut the broccoli into bite sized pieces same with the sausage. (I like to cut the sausage then cut it again in half to yield more pieces out of one package.) Place the Sausage and Broccoli in the pan together and let cook. Every once in a while stir the broccoli and make sure the sausage gets browned on both sides.

After the pasta is done cooking measure out about 2 cups of Heavy Cream and a half a cup of parm cheese. combine and stir until the mixture is thick. Add more cream or more parm to adjust the thickness. It looks weird at first, but once the mixture is heated up it will be DELIGHTFUL!!

Drain the pasta and turn off the skillet. In a Large mixing bowl add the pasta, sausage and broccoli then add the parm cream sauce. Mix all together until everything is covered in the yumminess. and enjoy.

I like a nice glass of wine with this and if im feeling adventurous i will make my home made garlc bread :)

Re: girls who love to cook

How about a good BROWNIE recipe. everyone needs a dessert with these yummy meals. This is mine everyone lovesssss them

1 1/2 to 2 cups of sugar- (I use a mug to measure)
3/4 cup of cocoa powder - i use hersheys
3 eggs
1 cup flour
1/2 cup of butter (2 sticks) or veg oil.
1 cup walnuts/ choc chips etc

add sugar and cocoa powder in a bowl and mix together.

beat 3 eggs in a separate bowl. then add eggs to powder mixture and mix with a whisk until powder mix is evenly distributed with the eggs.

add the one cup of flour and add half of the oil and mix together. add the rest of the oil only if the mixture is really really rough and falls apart. if not dont add anymore. mix well. The mixture should stick to the bowl, if it doesnt you added too much oil.

after mixing for about 5 minutes add your favorite topping and mix it in for about a minute.

add into 9x12 pan and bake on 350 heat for 30-50 minutes or until the batter only slightly sticks to the fork when sticking fork in the middle. (everyones oven is different so set time for 30 minutes at first and keep checking on it and add more time if it sticks too much)

Here is a picture of them.

Re: girls who love to cook

Got a few but we'll see how many I type up. This recipe has many steps but so worth it!
Dinner: ET Correct.
Chicken-Friend <-- err Fried Steak
12oz lean round beef ( I actually bought a package of eye rounds already cut)
1/4 c white all purpose flour
3/4 tsp salt divided ( or use to taste)
1/4 tsp black pepper divided
1 1/4 c skim milk divided
1 large egg white (I used whole egg)
1 c dried bread crumbs
3 slices bacon (can use reduced but I used real bacon)
Need can of cooking spray
1/2 c onions chopped
1/8 tsp hot pepper sauce, optional
*Place steak between 2 sheets of waxed paper ( if you use the pre-sliced ones skip this) and pound to about 1/2 inch thickness; slice steak into 4 equal pieces.
* Combine flour, 1/2 tsp salt and 1/8th tsp pepper on a plate. Combine 1/4 c. of milk and egg in a shallow bowl. Place bread crumbs on another plate.
*Dip a piece of steak in flour mixture, turn to coat on both sides. Next, dip steak in milk mixture, turn to coat both sides. Lastly, dip steak in bread crumbs; turn to coat both sides and set aside. Repeat with remaining steaks. Reserve 1 tbsp of leftover flour.
*In a large nonstick skillet, over med heat, brown bacon, flipping once, about 5 min. Remove from skillet, and set aside. Add steaks to same skillet, and place over med-high heat. (may want to add some Canola oil as needed) Cook 3-4 min per side for medium. Remove steaks and set aside.
*Off heat, coat skillet with cooking spray, and set over med heat. When hot, add onion; cook til tender, stirring occasionally, about 4min. Add reserved tbsp flour;cook, stirring occasionally for 1 min. Pour in remaining cup of milk, scraping up any browned bits with a wooden spoon. Reduce heat to med-low;add remaining 1/4 tsp salt, 1/8th tsp pepper and hot sauce. Crumble bacon; stir into skillet. Increase to med heat and cook til gravy is thickened, stirring constantly, about 1-3 min. Spoon gravy over steaks.

Chicken with Cremini Mushroom-Port Sauce (stolen from a weight watchers cookbook)

Ingredients:
4 (5oz) skinless boneless chicken breasts
½ tsp salt
¼ tsp black pepper
2 tsp olive oil
1 (10 oz) package of sliced cremini mushrooms (I also use sliced baby portabella mushrooms)
1/3 cup ruby port wine
1/3 cup reduced sodium chicken broth
2 tsp all purpose flour
2 garlic gloves, minced
½ tsp dried thyme

1) Sprinkle the chicken with salt and pepper. Heat 1 tsp of the oil in a large skillet over medium high heat. Add the chicken and cook until lightly browned, about 3 minutes on each side. Transfer to a plate and set aside

2) Add the remaining 1 tsp oil to skillet and add the mushrooms and cook, stirring until browned about 4 minutes

3) Stir together the port, broth, and flour in a small bowl until smooth. Pour into the skillet. Add the garlic, thyme. Cook, stirring constantly, until the sauce thickens and is bubbly, about 1 minute

4) Return the chicken to the skillet, turning to coat with the sauce. Reduce the heat and simmer, covered until cooked through, about 3 minutes on each side.

Re: girls who love to cook

Fresh Linguine with Sausage and Spinach (another stolen ww recipe)

Serves 4
Ingredients:
1 box of linguine
2 teaspoons olive oil
½ pound hot Italian turkey sausage (can also use the regular not hot turkey sausage)
1 garlic glove minced
1 (9oz) bag of baby spinach

1)Cook the linguine according to the package directions
Drain and reserve ½ cup of the water

2) Meanwhile, heat the oil in a large nonstick skillet over medium high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned about 5 minutes. Transfer to a plate and set aside. (In the summer time I throw the sausage on the grill and just cook it that way then cut into pieces when it is cooked)

3) Add the garlic to the skillet; cook, stirring frequently until lightly browned about 2 minutes, add to the sausage. Add the spinach to the skillet and cook, stirring just until wilted about 2 minutes.

4) Return the sausage to the skillet, cook, stirring until heated through, about 2 minutes. Add the pasta and reserved cooking water, stirring until heated through, about 1 minute.
