I used Sweet Karma Desserts in East Meadow--I worked with Brian who is their executive chef. It came out fabulous and yummy.

How far in advance did you start working on your cakes?

I used Dortoni Bakery. People from my DH's work couldn't stop talking about it! I got a quote from them a couple months before the wedding, and they told me to come back 2-3 weeks before to place the order. It looked and tasted amazing!

I was late because I got bogged down with planning and work. I ended up contacting them a little over a week before RH, but they were terrific and worked with me over e-mail.

Audrey's is amazing! This was ours. I realize it's not a football themed cake, but you can see the phenomenal job they did.

OOOOOOOOOOOOOOooooooooo - i just got back from a meeting with Tom - let me copy what I wrote on the 08 board for you!!!

ETA - here it is:

Okay - so i'm home from the bakery & getting my nails done..

First thing - baker is MAJOR hottie!!!!!! Shaved head & tattoos - oh dear!!!! Beyond friendly & Bonnie told me to say hi to him for her & he didn't charge me for the scans because i knew her on top of the Long Island Weddings Discount!!!!!!

The cake is going to be more money than he originally quoted me because i wanted fondant instead of buttercream icing. I asked the difference and he said buttercream would look cool - fondant would look flawless. I figure FH is worth flawless - so went for the upgrade.

The cake will be a Polamalu (43) black Steelers jersey - the FRONT of the jersey - with the 75th anniversary patch & the Steelers patch on it (he will scan in the pic, no charge). On top - towards the bottom of the jersey is the Terrible Towel (no charge). Another cake will be a small NJ Nets basketball & the third cake will be a Yankees hat.

Flavors (can change as I see fit) - basketball will be vanilla cake with key lime filling. Steelers jersey right now is chocolate fondant with vanilla cake with vanilla pastry filling filling. Yankee hat is chocolate fondant with chocolate cake & chocolate mousse filling.

He said because we're using the fondant - it's going to look like an actual shirt & hat and basketball....so it's going to be AMAZING!!!! I'm really excited - it's going to be soooooooooooooooooooooooooooo wonderful & he'll be totally shocked!!!!!

Cannot say enough about how wonderful everything has been with Tom at Audrey's Fine Baked Goods - GO THERE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Next up - tonight - hair blow out & style and then E-PICS!! Oh dear Lord i'm freaking out about that!!!!
