You can ask them for references. Also they have a resturant that you can eat at. There is also a Hamlet in Commack, which is owned by the same company. Good Luck with your planning. and the food was very good. My fiance also brings a lot of his clients there and he always has good things to say about the food(I'm VERY picky about food and so is he). I wouldn't worry about it, many places don't let you taste prior to giving a deposit. Continued success to all...
