We are going to do a donation to the Leukemia and Lymphoma society. Both my grandmother and a very close friend of mine died from Leukemia.

We are doing a full bottle of our favorite pinot grigio with heart shape bottle stoppers. FSIL works in wholesale liquor so we are getting a good deal.
Since we're having a vineyard wedding, we're most likely doing wine as a memento of the place. I was also thinking of doing mix CDs that including our first dance song, maybe some that will be played at the reception and others we like and are meaningful to us. Blank CDs are usually pretty inexpensive and I have a friend who's a graphic designer to possibly do the cover.
My FH's sister recently passed away so we are going to do a donation in her memory. We might also do some candy or something.
