We just booked our luau because the sooner you book...they better your seats are.
I'm up to doing the same thing! We're going to book a few things - helicopter tour, ATV tour, luau because we want to make sure 100% that we can do these things when we are there. Also one of our friends told us to book a rafting tour in Kauai because when she got there everyone was raving about one kind and it was booked. Unfortunately she can't remember the name of the company so we're trying to research and send her back the info to see if it makes her remember. But we're going to book at least those three things!
WE did the same thing... Kaui and Maui. We did our own excursions in Kaui... You have to do the Napoli Explorer. THe Zodiac. You'll go snorkeling and there's a speedboat that takes you out and dolphins swim up to your boat. In Maui we booked the Old Luhana Luau with our Travel Agent b/c it's the best one and that gets booked up a month or so in advance. We also booked the biking down the volcano in advance. Everything else you can go through the hotel
